Marina, do you know that I need to order fresh lamb in the market in advance, but the time has already run out
Yes, and in general, you need to tune in to such a ram feat, at least for a few days

Is this your New Year's recipe, or is it a training flight again?

Great!
Twist
Tanyusha, sorry, of course. And before the holidays we have selected mutton.
But the holidays are long. And after them, I think there will be more than one reason to cook such meat.
And I cooked for my daughter, who flew in today on vacation. To the question "What should you cook?" there was a short answer - meat, and a lot.
In the afternoon, her friends came, so that practically nothing remained of the lamb shoulder.

MariS
We love the lamb too !!! Marish, an interesting recipe, I'm taking it to your bookmarks!

La-la we cook again, now for my daughter
Twist
Marish, soul mate! Help yourself to your health !!!

Tanyusha, so my daughter and her friends sentenced the lamb
She said that until tomorrow she would make a list of dishes for "feeding the student at home." It will be interesting to look at him

Medusa
Happy New Year!
Health and good mood !!!

And as a side dish to the wish, this is a sketch:

Letter to the editorial board of a women's culinary magazine:
“The recipes for the tarragon and anchovy salad and the artichoke-stuffed eel dishes with the 1724 Beaujolais sauce, published in issue 34 under the heading“ Granny Antoinette's Recipes, ”were very much to our family!
True, I replaced almost all the products with potatoes, and instead of Beaujolais there was vinegar GOST-4747423 of 1968, but still - thank you very much for the recipe! "
Twist
Medusa, and you with the coming! Thank you for your attention to my recipes and, as always, a non-trivial comment.
Arka
Marisha made my favorite lamb again!
Good lamb !!!
The little hands stretch
Twist
Arochka,! Delicious lamb turns out
I do medium roast, if you like fried more, then the baking time needs to be slightly increased.
Arka
In our family, tastes do not match. I love low roast, and mine loves "crackers"! You have to do a couple of hours so that the crust is well fried and the edges are dry. I cut myself closer to the bone, where the juice still remains
I have a ham with a saddle in the fridge right now. I want to fix it from the French, I have been looking for a long time.
Twist
It's easier for me, I have complete unanimity on this issue
Arochka, I can imagine what a delicious treat you will make! The recipe in the studio!
Feofania
: mail1: what a beauty!

Feofania, Thank you!!! Glad you liked it!

I have a ham with a saddle in the fridge right now.

How did the saddle fit into the refrigerator?
Arka
The other day I marinated a lamb for baking. I remembered this version of yours with kiwi. I heard that kiwi softens mutton. I didn’t add anything except garlic and rosemary (it was necessary to cut the bush), not even wine. I cut the kiwi into thin circles and covered the meat with them on all sides. Marinated in the refrigerator for 15 hours. What can I say ... Kiwi works wonders! Copes as well as papaya! The meat was melting!
Twist
Arochka, hello, dear! I am very glad that the recipe was useful to you!
Kiwi works wonders! Copes as well as papaya! The meat was melting!
Can you tell us more about papaya? I have never used it in meat dishes. What meat and what spices does it go best with? Share your secret, pliz.
MariS
And I wonder about papaya!
I tried the property of kiwi to make meat very juicy on beef - they made barbecue for the new year.
Now it's the turn to try on mutton ...
Arochka, share the military secret, pzhl!
Arka
Girls, this is not a secret. Papaya pulp softens meat well due to the special enzyme contained in it. It is necessary to marinate the meat in papaya puree for a few hours.
They often sell unripe papaya. It is necessary to put it in one bag with bananas, it will ripen instantly.
Ripe papaya is tasty both raw and can be used in salad.
How to choose:
to smell - a pleasant unsharp smell,
touch - should be soft, like a ripe avocado,
look - there should be no dark spots.
Twist
Arochka, Thank you! And then I only used papaya in desserts. Now I'll try with meat!

dried pineapples
Can you please tell me where you can buy dried pineapple?
Gala
If the meat (lamb, beef) is marinated in something for several hours (whether papaya, kiwi, just spices), you get wonderful and tender meat
But, undoubtedly, fruits give an original accent.
Twist
iritka, here such pineapples are sold in the markets - in shops with nuts, dried fruits. They are always cut into whole rings and are easy to distinguish from ordinary candied fruits. You can also buy it in online stores.
