Cooking method

  • When they talk about Christmas holidays in Greece, they mean a rather long period between Christmas (December 25), January 1 and Epiphany (Fota - Theophania, January 6). During these days, of course, in all Greek cities and villages, numerous festive events take place, the soul of which is the age-old Christmas rites and traditions.
  • While Christmas is of course the main winter holiday, New Years are celebrated just as widely. There are already a number of customs associated with the change of the year on the calendar. Here is some of them. According to one of the traditions, exactly at midnight the head of the family goes out into the yard and breaks a pomegranate fruit against the wall. If its seeds scatter around the yard, the family will live happily in the new year.
  • In general, on New Year's Eve in Greece, a special sign is also given to ordinary stones taken somewhere on the pavement or by the stream. Any guest entering the house of hospitable hosts must throw a stone with the words: "Let the wealth of the hosts be as heavy as this stone."
  • The first of January in Greece is celebrated as the day of remembrance of the popularly beloved saint, St. Basil, who is also revered on Greek soil as the Russian Father Frost. In his honor, a special cake is prepared, called by his name - "basilopita", in which a small silver coin is hidden during baking. The loaf is cut during the New Year's celebration: the one who gets it is considered happy and lucky for the whole next year.
  • Let's pay special attention to the traditional Greek table, because its dishes are worth a separate discussion! Cabbage rolls, various dishes of pork and lamb are cooked here everywhere. Roasted turkey stuffed with rice, offal, chestnuts, raisins or nuts has only recently become a decoration on the Christmas table. Wild boar meat and hare meat can be frequent guests on the table. Pickles are also loved by the Greeks: they pickle vegetables, most often cabbage, which is served along with pieces of chicken meat.
  • The assortment of sweets is very large. Basically, these are different types of cookies: honey with nut sprinkles (melomakarona), almond (kurabiedes) like brushwood (diples) and others. Greek grandmothers say that Christmas sweets will "sweeten the newborn Christ."
  • I will try, as far as possible, to introduce you to the most popular Greek recipes, and we will start with amazingly delicious cookies - Melomakarona... So, let's begin.
  • Beat the butter white with sugar, add olive oil and beat again, then yogurt - beat again.

  • Gradually adding flour to knead the dough, it turns out to be not very smooth, with cracks.

  • Roll out a portion of the dough with a sausage, cut into pieces and shape into an oval shape.
  • Place the cookies on a baking sheet lined with baking paper and bake in a preheated oven at 190 "for 30 minutes until golden brown.

  • .... and putting them on a dish sprinkle with ground nuts. Do not be afraid to fold the cookies in a slide, even if they are still warm, do not stick together or deform, keep their shape perfectly. If you want a wetter cookie, soak it in the syrup for 1 minute.

  • syrup:
  • Dissolve sugar in well heated water. boil for 2-3 minutes, remove from heat and stir well by adding honey. Cool down.
  • From this amount of ingredients, I got 70 pieces of melomakaron - the most delicate and melting in the mouth, with a honey aroma and a nutty taste of cookies.

Natasha, thank you very much for the recipe! I tried it in Greece for Christmas, it's something !!!!! True, our hostess still abundantly covered it with powdered sugar, but perhaps these are variations on a theme ... after all, as many housewives, there are so many recipes. I will definitely cook it.

And for this, too, many human thanks! I will do both ... and in general I love everything about Greek cuisine for a long time, tenderly and tenderly ... and the country itself and the Greeks. I somehow happened to live there for several months, I still remember this time as the happiest and fabulous in my life. Eucharistume natapit roll

I have no photo report, but with great gratitude !!!
I baked it twice already, however, the second time "for reasons" - I did not find all the necessary products (spices and nuts) and I decided to make it chocolate and sprinkle with coconut
very tasty, aromatic, rich and crumbly cookies,
there is only one drawback - it ends very quickly! I baked 1/2 portion, but next time I will not reduce
and yes, without cocoa I liked it more, although I really like the orange-chocolate combination ...
Thank you!!!
