Stuffed pork in ginger and honey glaze

Ingredients

pork (not fatty) 1.5-2 kg
dried apricots 100 g
hot pepper Piri-Piri (Iberika) 0.5 jars
kiwi 1 PC
marinade:
fresh ginger root (grated) 1 tbsp
light honey 2 tbsp
soy sauce 1 tbsp
balsamic vinegar 1 tsp
mixture of four peppers (ground) 0.5 h l

Cooking method

  • 1. Cut the meat, unfold it with a "book" and slightly beat off.

  • 2. Prepare the marinade from the above ingredients. Grease the meat with about a third of the marinade and let stand for 30 minutes.

  • 4. Dried apricots cut into small pieces, kiwi into thin strips and place on the meat. Put the peppers on top. Roll the meat very tightly into a roll and wrap in several layers of foil in the form of "candy". Place in a baking dish, pour some hot water (about 100 ml) on the bottom and put in an oven preheated to 180C for 30-40 minutes.
  • 5. Then cut the foil on top, unfold the edges, grease again with marinade and return to the oven. Bake for about 30-40 minutes more, periodically pouring over the resulting juice.

  • Serve hot with a refreshing salad with a light dressing.

Note

The meat is juicy and tender, very, very aromatic, with a piquant taste.
