Poached pear with Brie cheese

Ingredients

Small pears, not very soft 700 gr.
Dry red wine 500 ml
Sugar 150 gr.
Oranges 200 gr.
Lemon (large) 1 PC.
Cinnamon stick 1 PC.
Carnation 3-4 pcs.
Vanilla 1 gr.
for serving:
Brie cheese 150 gr.
Mozzarella 125 gr.
Shortbread salty cookies 3-4 pcs.
Pine nuts 2 tbsp. l.
Mint leaves

Cooking method

  • Peel the pears, cut in half, remove seeds and groove from the stalk.
  • Poached pear with Brie cheese
  • Put wine, squeezed juice from orange and lemon, half of the zest from squeezed lemon, vanilla in a saucepan. cinnamon and cloves, bring to a boil, remove heat and cook for 5 minutes.
  • Add pears, cook for 20 minutes, constantly turning (I covered the pears on top with a plate of a smaller diameter than the saucepan so that they do not float and evenly "stain" in the wine, then there is no need to turn them over). Cooking time for pears depends on their size and degree of ripeness.
  • Remove pears from heat, cool and leave in syrup until next day.
  • Poached pear with Brie cheese
  • Put the pears on a dish.
  • Poached pear with Brie cheese
  • If you do not want to cook pears in wine, you can pour 1 liter of water into a saucepan, add 110 g of sugar and 120 g of grated black currant + cinnamon, lemon, cloves and vanilla, bring to a boil and cook for 30 minutes.
  • Strain the remaining syrup and boil over low heat 3 times.
  • Serving:
  • Pour syrup on a plate, place a poached pear, a piece of cheese on top, sprinkle with cookie crumbs and toasted nuts.
  • Decorate with mint leaves.
