Squid salad with spicy cognac dressing

Ingredients

squid 250-300 g
krill meat 1 jar (200 g)
avocado 1 PC
physalis 8-10 pcs
Apple 0.5 pcs
red onion 0.5 pcs
eggs 2 pcs
sour cream 20% fat 100 g
lemon juice 1 tbsp
cognac 3 tbsp
mixture of four peppers (ground) taste
basil, parsley 3-4 branches
salt, sugar by a pinch
anchovies 6-8 pcs

Cooking method

  • 1. Peel the squid carcasses, cut into thin strips, dip in boiling salted water for 3-4 minutes and cool completely.
  • 2. Cut the onion into thin half rings and marinate in lemon juice with a pinch of sugar for 5-10 minutes. Combine cooled squid, krill meat (drain all liquid) and onion.
  • 3. Cut the eggs lengthwise, remove the yolks. Cut the proteins into strips and add to the squid.
  • 4. Peel the apple, cut into strips. Physalis cut into quarters. Finely chop the parsley and basil. Add to prepared ingredients and mix gently.

  • 5. Grind egg yolks with anchovies. Cut the avocado lengthwise, remove the pit and remove the pulp with a spoon. Combine with yolks and anchovies, add sour cream and beat until smooth. Pour in cognac, pepper and beat again.
