Ingredients

Dough:
pressed yeast (or dry fast acting) 13 g (2 tsp)
wheat flour 135 g
warm water 75 g
warm milk 30 g
Dough:

granulated sugar 75 g
butter 120 g
salt 1 tsp
Filling:
butter 50 g
candied orange 75 g
raisins 75 g
Glaze:
protein 30 g
powdered sugar 4-5 st. l

Cooking method

  • Opara:
  • Mix yeast with flour, add warm water, milk and knead the dough. Cover with foil and leave warm for 30 minutes.
  • Dough:
  • Grind the yolks with granulated sugar and salt, add to the dough. We also add there 250g flour and warm milk. We begin to knead the dough, as soon as it "grabbed" into a lump, stop the kneading and pause for 10-15 minutes, after which we resume the kneading and add the flour in small pieces and the remaining flour. At this stage, it's best to take your time and not add all the butter and flour at once. Knead the dough until smooth (the dough turns out to be of normal consistency, not sticky, easily leaves the walls when kneading and does not smear), leave to ferment for 2 hours.
  • We roll out the finished dough on the table and roll it into a thin layer 2-3 mm thick, grease with melted butter and spread the filling. We roll it into a roll along the short side (you should get a roll about 65-70 cm long). Place the roll on the baking paper, seam down and cut into two. We unfold both parts of the roll with the slices up and, starting from the middle, we intertwine them, connect the ends of the roll, forming a "wreath".
  • We transfer the dough piece with paper to a baking sheet, cover with foil and let it double (45-50 minutes).
  • We put in an oven preheated to 200 C (convection 180 C) and bake for 40-50 minutes until cooked (be guided by your oven!).
  • Cooking the icing. Whisk the protein into a light foam, add the powdered sugar and stir until smooth.
  • Apply the powder to the hot cake and return it to the switched off oven for 40-50 seconds.
  • Put the finished cake on a wire rack and cool.

Has slightly changed the dough kneading technology, namely:
1. Dough. In the original recipe, only water is used for it. From 135 g of flour and 75 g of water, the dough turned out to be very steep, when kneading in a bread maker, it did not gather into a single lump and was very dry.
2. Butter with milk, yolks and sugar was added to the dough, after which flour was introduced. As a result, the finished baked goods were heavier. Therefore, when I baked this recipe for the second time, I added butter in 5 passes, in small pieces along with flour.
