wheat flour 370g
salt 8g
honey 1 tbsp. l.
dark beer 220g
instant yeast (optional) 2g
sunflower seeds for sprinkling (optional) 40g

Cooking method

  • Refresh the rye sourdough with 100% moisture in 6-9 hours. Pour beer into a bucket of a bread machine and add sourdough, honey, salt, flour and yeast. Those who are sure of the strength of their leavening yeast need not add it. In the process of mixing, I added another 20 g of beer. Focus on the state of the kolobok. The dough is kneaded on the "dough" program for 1 hour 30 minutes. If during this time the dough does not rise enough, leave it in the bread maker until it doubles. Before baking, sprinkle with water and bake on the baking program for 60 minutes. To be honest, I thought that 60 minutes would not be enough, but I had to leave and there was no one to look after the bread. I returned only after 3 hours. But to my delight, the bread was baked and even after standing on the "keeping warm for 1 hour" program after baking, it was not soggy. The bread turned out to be very tasty, fragrant, soft and even the roof did not collapse, which is often the case with rye bread.
