Ingredients

calf shank 1-1.5 kg
red onion 1 PC
carrot 1 PC
Jerusalem artichoke 5-6 pcs
garlic 2-3 cloves
tomato 2 pcs
white wine (CHARDONNAY) 150 ml
vegetable broth 500 ml
flour 30-50 g
mixture of four peppers (ground) 1 tsp
parsley, thyme, marjoram 2 h l
salt taste
olive oil and butter for frying
for gremolata:
fresh parsley 2 h l
lemon peel 1 tsp

Cooking method

  • 1. Cut the meat into portions 4-5 cm thick, season with salt. pepper, roll in flour and fry in a mixture of olive oil and butter until golden brown. Transfer to a saucepan, pour over with vegetable broth, add dry herbs and put in an oven preheated to 180C for about an hour (simmer under the lid).
  • 2. Peel onions, carrots, Jerusalem artichoke and cut into large pieces. Dip in the remaining flour, season with salt, pepper and fry in a mixture of oils for 3-5 minutes over high heat. Pour wine into a frying pan, add garlic, let it boil and remove from heat.
  • 3. Add the vegetable mixture to the meat and simmer until tender.
  • 4. Finely chop the leaves of fresh parsley, mix with the lemon zest and sprinkle on the finished dish just before serving.

How delicious it looks. A wonderful recipe, but I don't like Jerusalem artichoke for all its positive qualities. Once upon a time I prepared it boiled and the taste seemed to me similar to unpleasantly smelling polyethylene bags. Probably I can't cook properly.

Natasha, if there is a rejection of Jerusalem artichoke, then you can not use it at all. For this recipe, this is absolutely not critical.
