Mom's Pie (Viennese Cookies)

Ingredients

Wheat flour 250 gr. (1.5 tbsp.)
Sugar 100 g (0.5 tbsp.)
Margarine 125 gr.
Soda 0.5 tsp
or baking powder 0.5 bag
Vanillin 1.5 gr. (1 package)
Sour cream 2 tbsp. l.
Egg 1
Cinnamon taste
Applesauce 3 tbsp. l.
Starch 1 tbsp. l.

Cooking method

  • Found my mother's recipe in an old notebook. She has a measure in glasses, I weighed it on an electronic scale. I fantasized and now I'm baking a pie. The recipe is similar to Viennese biscuits.
  • Dry food comes first. Sift the flour, add sugar, soda (or baking powder), vanillin, or cinnamon (to taste). Add margarine. Knead, it turns out like crumbly. Add sour cream and egg, knead the dough. While preparing the filling, you can put it in the refrigerator.
  • For the filling, I use applesauce, which I prepared from Antonovka, I add a little starch. I think you can use any jam / jam.
  • Grease the skillet with fat, use pork lard. I divide the dough into unequal parts, roll the large one evenly in a frying pan. Sprinkle a little starch, spread the applesauce. I lay out the remaining father-in-law on top in strips. Can be garnished with jam cherries.
  • Bake for about 30 minutes in the oven at 180 degrees. to a beautiful crust.

0.5 tsp soda and 1 bag of baking powder is clearly not an equivalent replacement. Anyway, such an amount of baking powder per 250 g of flour is a bit too much

In my experience, I hardly noticed the difference
Based on my experience:
- if the soda in the recipe is 0.5 tsp, then the baking powder needs about 1.5 tsp.
BUT YOU'RE RIGHT
looked at the baking powder that I use. Preston firm weight 12g. The package says - 500 gr. flour.
I will correct the recipe.

Very interesting and simple,
It seems to me that instead of sweet jam you can put crushed lingonberries, e.g. with sugar, if the dough looks like a shortbread sweet, it will be delicious

I think the sour berries will be very good! My favorite berry is cranberry, sometimes I make with it
