Braised rabbit in Oursson 5005 pressure cooker

Ingredients

Rabbit fresh 1-1.3 kg.
Bulb onions 1 PC.
Fresh garlic 2 teeth
Vegetable oil 1-2 tbsp. l.
Dry white wine (or semi-sweet) 4-5 st. l.
Butter 40-50 grams for roasting rabbit
Salt taste

Cooking method

Cut the rabbit into portions and put in a bowl.

Add chopped onions, crushed garlic, salt, vegetable oil, white wine, mix and marinate for 1-2 hours. During this time, stir the meat a couple of times.

Melt butter in a frying pan, add pieces of meat. Squeeze the meat slightly from the marinade, wipe it with a napkin so that there is no excess liquid. Do not pour out the liquid remaining in the marinade!

Fry the rabbit meat until golden brown. Transfer the meat to the saucepan of the pressure cooker.

Fry onions and garlic in the remaining oil, lightly sauté for 1-2 minutes. Transfer the onion to a saucepan over the meat. Pour the remaining liquid from the marinade there.

Close the lid of the pressure cooker, expose EXTINGUISH mode, pressure 3, time 40 minutes by default, and bring the meat until tender.

Serve the rabbit meat with red cabbage, top the meat with sauce from the saucepan.

When I used to cook a rabbit, I marinated it in onions + Art. l. vinegar. And in this recipe, it seems that dry wine is taken instead of vinegar. I like this idea better ...

I don't use vinegar for the marinade. White dry or even semi-sweet wine is better suited, depending on how you want to taste. It is more expensive than vinegar but tastes better and safer than vinegar
