Lemon-poppy biscotti

Ingredients

egg 1 PC
proteins 2 pcs
granulated sugar 180 g
premium wheat flour 300 g
baking powder 0.5 tsp
soda 0.5 tsp
poppy 3-3.5 st. l.
nuts 60 g
lemon zest 1 tbsp. l.
lemon juice 1.5 tsp.

Cooking method

  • Mix flour with baking soda, baking powder, zest and poppy seeds. Chop the nuts (ideally fresh almonds) with a knife.
  • Beat the egg and whites with sugar until fluffy. Add half of the flour mixture, lemon juice and the remaining flour mixture, mix thoroughly each time. I had citrus essence from Dr. Otcher, added 3-4 drops for the scent. The dough turns out to be quite plastic and pleasant to work with, we mix in the nuts.
  • Grease a baking tray with oil and cover it with parchment, form two bars of 20-22 cm long from the dough. We spread them on a baking sheet at some distance from each other; during the baking process, the bars grow well in size.
  • We bake for about 30 minutes in an oven preheated to 180 (convection 160) degrees, check readiness with a toothpick - it comes out dry from ready-made bars. If baked in one bar, the baking time will increase to 40-45 minutes.
  • We cool our bars and then cut them into slices about a centimeter thick.
  • Put on a baking sheet (with parchment) and bake for another 20 minutes at 150 (130 convection) degrees at the topmost level, once turning the biscotti to the other side in the middle of the baking.
  • Let the liver cool completely. We store in a tightly closed container.
  • Enjoy your tea!

I expected a little more crumbling, as it were. In terms of hardness, it turned out close to crackers. Although slightly less firm than croutons. :-)
But, due to the hardness of their biscotti, they can lie for a long time in a tightly closed box and at the same time they will always be ready for use.
