Ingredients

For the test:
Wheat flour 3 glasses
Butter 200 g
Sour cream 200 g
Salt incomplete tsp
For fillings:
Butter 400 g
Mayonnaise 3 tbsp. l.
Horseradish table 2 tbsp. l.
Table mustard 1 tsp
Salted salmon 100 g
Canned sardines with oil 2 banks
Hot smoked sevruga 150 g
Boiled sturgeon 150 g
Eggs 5 pieces.
Salted herring 1 PC.
Chopped green onion 2 tbsp. l.
Chopped parsley 2 tbsp. l.
Fresh tomatoes 3 pcs.
Fresh cucumbers 2 pcs.
Freshly ground pepper taste

Cooking method

  • Prepare 5 cakes. To do this, chop flour and butter until you get a kind of oily cereal, pour in sour cream mixed with 1 tsp. salt, quickly knead the dough and refrigerate for 10-15 minutes. Cut the dough into 5 equal parts, I got pieces weighing 175 g. Roll out the cakes of the required diameter, I rolled them to 30 cm, as small as possible. It was convenient to do this on a silicone mat with marked circles, and baked there. Bake at 180-190 degrees for about 10-13 minutes until slightly golden brown.
  • Prepare the fillings:
  • 1) Soak 1 large herring in milk (I had lightly salted, I skipped this step), grind with a meat grinder or blender, grind with 100 g of butter and 5 steep yolks. To do this, boil the eggs hard-boiled, cut into circles 1 cm thick. Remove the yolks from the proteins and grind them with herring, and leave the rings of proteins for decoration, pouring them with cold water before use. Add 1 tbsp to the herring mince. l. chopped green onions and some parsley. Pepper to taste.
  • 2) 2 tbsp. l. horseradish grind with 2 tbsp. l. mayonnaise;
  • 3) 1 tsp. grind mustard with 100 g of butter;
  • 4) sardines, taking out the spinal bone, grind with 50 g of butter, 1 tbsp. l. mayonnaise and pepper to taste.
  • Put a mass of herring with butter and yolks on the first baked crust, cover with another crust, grease it with a mass of horseradish, put boiled sturgeon on top with a continuous layer, grease the third crust abundantly with butter, cover all over with slices of salmon. Brush the crust covering the salmon with oil and mustard and spread hot smoked stellate sturgeon thin slices on it (instead of stellate sturgeon I have chum salmon). Cover the last cake with a plate with a small load and refrigerate overnight. In the morning, remove the board, transfer the cake to the dish on which it will be served. Coat the sides of the cake with butter, pounded with green onions, and grease the top with sardine paste, spread the rings of proteins on it. Fill each ring with red or black caviar and chopped food left over from the cake filling (I only filled it with caviar). Sprinkle the spaces between the filled rings with chopped green onions and parsley. On top, along the edge of the cake, in small piles, alternate chopped fresh cucumbers and tomatoes.
  • Put the cake in the cold again, cool well, then cut into portions. To do this, stepping back from the edge by 2-3 fingers, cut a ring around the entire cake with a knife, cut this ring into pieces 2 fingers wide. Cut the middle with rays from the center to the edge of the resulting circle. Put a special spatula or a beautiful wide knife with the cake.

  • This delicious cake will not leave anyone indifferent and will become the "highlight of the program" of any feast. I didn't weigh the cake, but it turns out to be big and heavy, enough for everyone!

This recipe is from the old Festive Table book. The recipe has been tested many times. Always makes a splash.Moreover, you do not need to bother with expensive products, you can replace a lot with more affordable ones, it will still be very tasty. Here I managed to collect almost everything according to the recipe, I didn't find only hot smoked stellate sturgeon, I replaced it with chum salmon.
