Ingredients

Dough:
Warm milk 120 ml
Wheat flour 250 gr.
Fresh / dry yeast 25 g / 2 tsp

Butter 60 gr.
Sugar 2 tbsp. l.
Salt 0.5 tsp
Filling:
Cranberry 200 gr.
Sugar 100 g
Zest of 1 orange

Cooking method

  • In the recipe, the dough is kneaded by hand, but I carried it out with the help of a bread machine.
  • Cooking dough:
  • Put warm milk, flour and yeast into the bucket of the bread machine. Switch on the "Yeast dough" program for a duration of 1:20 or more. Or make a batch on any program and turn off the bread maker, leaving the dough to come up for 1-2 hours.
  • Cooking the dough:
  • Pour the remaining warm milk into the steamed dough. Beat eggs lightly with sugar and salt (I just loosened it with a fork) and add a bread machine to the bucket. Pour in softened butter and flour. Knead the dough using the "Noodle dough" setting ("Yeast free dough") or any other program. Turn off the bread maker. Cover the bucket with cling film and refrigerate for 2 hours to 24 hours. (I had the dough in the refrigerator for 6.5 hours).

  • Cooking the filling:
  • Wash and dry the cranberries.

  • Grind the berries in a blender. Transfer to a saucepan, add sugar and zest. Simmer over medium heat, stirring constantly until thickened (until the consistency of jam - I forgot to photograph). Refrigerate.
  • We make wreaths:
  • Put the finished dough on a work surface dusted with flour and roll it out into a rectangle 60x30 cm.
  • Spread the filling over the surface of the dough, leaving 1 cm free edges.

  • Fold the dough in three and pinch the edges, roll a little on the roll with a rolling pin. You will get a rectangle about 30x20 cm in size.

  • Cut the roll into strips of about 3 cm each (12 pcs.)

  • Twist each strip with a tourniquet 3-4 times and roll up into a ring, pinch the ends. Place on a baking sheet on baking paper

  • Bake in the oven at 200-210 * from 15 minutes (focus on your oven).

At the first stage - "dough" there was a plug. As it is customary to see the dough in the form of a batter, according to the proportion specified in the recipe for the dough, chopped crumb was obtained, added another 60 ml of milk from the main recipe - it turned out a smearing bun.
