Potato-eggplant pancakes

Ingredients

Potatoes 5 pieces
Eggplant 1-2 pcs.
Carrot 2 pcs.
Flour 3-4 tbsp. l.
Egg 1 PC.
Thyme 1 tsp
Coriander 1 tsp
Black pepper pinch
Salt
Vegetable oil for frying

Cooking method

  • 1. Cut the eggplants into thin strips, season with salt and pepper, add some coriander and thyme (or other favorite spices). Then fry until half cooked in a small amount of vegetable or butter.
  • 2. Grate potatoes and carrots. Add eggplant and other ingredients. Mix the whole mass well.
  • 3. Fry the cakes until golden brown, covered with a lid, turning occasionally. I used corn oil for frying.
  • Serve garnished with basil leaves and sour cream.
  • Bon Appetit!!!
