Cake "Coffee with cinnamon"

Cinnamon Coffee Cake

Ingredients

Cake:
Flour 300 g
Butter 200 g
Brown sugar 300 g
Eggs (large) 3 pcs.
Natural coffee + water 3 tsp + 130 ml
Almonds (or almond flour) 50 g
Bitter chocolate (72%) 50 g
Cinnamon 1 tbsp. l.
Baking powder 2 tsp
Impregnation:
Rum syrup 50 ml
Apricot jam (jam) 1 tbsp
Cream:
Cream 33% fat 300 ml
White chocolate 300 g
Finishing:
Cream 33% fat 150 ml
Powdered sugar 2-3 tbsp
Sponge crumbs mixed with cinnamon

Cooking method

  • Cake:
  • 1. Peel and grind the almonds into small crumbs (if you use almond flour, skip this step). Add one protein and 1 tbsp of sugar (take from the total amount) and beat until smooth. Brew coffee, dissolve chocolate in it and cool slightly.
  • 2. Mix flour with cinnamon and baking powder. Beat softened butter with sugar until creamy. Add eggs and yolk, one at a time, beat again. Then add the almonds and beat again.
  • 3. In several steps add two-thirds of the flour, then add part of the coffee-chocolate mixture, then the remaining flour and coffee. Pour the dough into a mold (diameter 26 cm) and bake at 180C until dry with a skewer. Cool the finished cake on a wire rack.
  • Cream:
  • 4. For the cream, warm up the cream, add white chocolate and dissolve until smooth. Refrigerate for at least 2 hours. Whisk before use.
  • Assembly:
  • 5. Cut the cooled cake into three pieces, soak and coat with cream.

  • 6. Whisk the cream and icing sugar, cover the sides and top of the cake and sprinkle with the cinnamon and biscuit crumbs.
  • If desired, you can add raisins soaked in rum to the cream, or simply distribute it over the surface of the cakes after soaking.
