Tortillas with sesame paste and savory

Ingredients

For sesame paste:
sesame 2 tbsp
olive oil 1-1.5 tbsp
lemon juice 1 tbsp
water 1 tbsp
garlic 1-2 cloves
savory 0.5 h l
Dough:
flour 50 g
water (33C) 100 ml
fresh yeast 6 g
sugar 2 h l

water 70-80ml
salt 0.5 h l
olive oil 2 h l

Cooking method

  • 1. Grind sesame seeds slightly dried in the oven in a blender into small crumbs. Gradually add olive oil while whisking (it is convenient to do this in pulse mode). Then add garlic passed through a press, savory. Mix water with lemon juice and, adding liquid in a thin stream, beat everything together until the consistency of thick sour cream.
  • 2. Grind yeast with sugar. Pour water into flour, add yeast and whisk lightly. Leave for 15-20 minutes in a warm place.

  • 3. Mix flour with salt, combine with ready-made dough, add sesame paste, mix and leave for 5 minutes. Then add the remaining water and knead the dough for 2 minutes on low speed. Add olive oil and continue kneading at high speed - knead for another 5 minutes.

  • Round the dough (pre-dip your hands in flour, as the dough is sticky) and leave to rise for an hour.
  • 4. Put the finished dough on a flour-dusted cutting mat, stretch it into a rectangle and roll it up. Then divide into four equal parts. Roll each part into a circle about 1 cm thick, make notches, sprinkle with sesame seeds, grease with milk and let it stand for 30 minutes.

  • 5. Heat the oven to 220C, sprinkle lightly with water and bake the cakes for the first 5 minutes. Then lower the temperature to 200C and bring it to readiness - another 5-7 minutes. Grease the cakes with milk again before baking.

Note

The tortillas have a thin, very crispy crust. The aroma when baking is fantastic. Best served while still warm.
