Potted Beans - Ancient Byzantine Recipe in a Panasonic Multicooker

Ingredients

Beans 350 g
Bulbs 12 large
Rast. oil 0.5 tbsp.
Water 1 l
Salt 1 full tsp
Pepper 1 tsp
Red pepper
(I added curry instead of pepper)
1 incomplete Art. l.

Cooking method

  • 1. Soak beans overnight in a liter of cool water. In the morning, drain the liquid into a separate bowl (we still need it).
  • 2. Cut the onion into rings (I used a Berner grater) Fry the onion in vegetable oil, salt, pepper, add curry.
  • 3. Then we put the cartoons in a saucepan in layers: beans - onions - beans - onions - beans - onions - beans (the last layer should be beans)
  • 4. Fill all layers with 400 ml of liquid (see point 1)
  • 5. We put the saucepan in the cartoon and set the baking mode for 50 minutes
  • Everything is ready.

Beans (soaked in the evening) - 1.5 mw. h.
Water - 5 mw. h.
Garlic - cloves of one head

First I put bacon, then onions, then beans, then onions again, then beans again. I began to fill it with water, I wanted 1: 5 to beans, that is, 7.5 mw. hours, but ... after the fifth cup I reached the maximum level and did not pour more. I left the cloves of garlic and put it on Pilaf.

Three hours later, the husband began to doubt if the multicooker had gone bad. Well, I drove him away from the cartoon for the purity of the experiment. It (the dish) took 4.5 hours to cook!

The onions / lard / garlic are more than boiled, although I'm not sure if this is bad. Maybe next time they need to be added closer to the end ... But beans, it seems, one glass of water was not enough ...

Or maybe this dish is not for a multicooker, but for a pressure cooker ... But we were in no hurry, so we didn't strain 4.5 hours.

I understand that it is unlikely that in Byzantium, beans were cooked with bacon, but I took this recipe as a basis, so I am writing a review here ...

I took black beans, despite the fact that they were soaked overnight + in the morning, it turned out delicious, but they were harsh, put them in addition to stewing, added water.

Somewhere they said that you can not soak the beans overnight, but boil (bring to a boil, add cold water, then again and again, and as a result of the temperature drop, the beans are cooked faster) Maybe it should be boiled beforehand, but not completely ?

I think that this recipe was originally intended for cooking in a pot, and then it was adapted to new technologies.
I usually cook beans without soaking with the addition of a little salt and soda. Cooks faster and boils better.

Girls, the most tender beans are obtained only with the Stew mode, it is undesirable to heat the beans quickly and boil over high heat. Bean protein is akin to chicken protein, so the slower the heating and the quieter the fire under the boiled beans, the more tender they will be. For comparison, try frying one egg over the smallest heat and then the other over high heat.That which was fried on a large one will be much harder! Therefore, I most often cook in the Zepter saucepan over the smallest heat and with the lid closed, be sure to put the beans in cold water and heat it with it over the smallest heat (you cannot boil quickly and then turn down the heat). All this is wonderful in Pokhlebkin's writing, so whoever has this author, look for beans.

Lola, thanks for the recipe. I cooked the beans the same day I read it. I did not soak in advance, I poured the hall. water, then added cold to the boiled one (and so on 4 times). Then in about 40 minutes. everything was cooked. The onion fried a lot. I threw spices and condiments from the bulldozer. I put it in the oven and when everything was extinguished, I could not resist trying. Well, I ate for the night.

My only mistake - I did too much, ate for three days.

But the recipe is great (especially since the post is on the nose).
