Bread with three cheeses according to J. Schapter (oven)

Ingredients

Water 180 ml
Egg 1 PC.
Mascarpone cheese 100 g
Wheat flour 1 grade 400 gr.
Whole grain wheat flour 50 gr.
Sugar 2 tsp
Salt 1 tsp
Gorgonzola cheese (I have DorBlue) - cut into pieces 75 gr.
Parmesan cheese - grated 75 gr.
Chives - finely chopped (not used) 3 tbsp. l.
Dry yeast 1.5 tsp.
For sprinkling (did not do)
Yolk 1 PC.
Water 1 tbsp. l.
Wheat flakes 1 tbsp. l.

Cooking method

  • Shake the egg in water and pour it into the bucket of a bread machine.
  • Add Mascarpone cheese, salt, sugar and both types of flour.
  • Knead the dough (Basic mode).
  • During the main batch, 5-10 minutes before the end, add Gorgonzola (DorBlue), Parmesan and chives.
  • After the main batch, leave in the bread maker for 30 minutes.
  • Then put on a table dusted with flour, form a round (or any other shape) bread. Cover with plastic wrap and leave to rise for 40-60 minutes. (I put the dough in the proofing basket under the towel on the table.)
  • Preheat the oven to 250 * C (together with a stone, if any).
  • Mix the egg yolk with water and grease the top of the loaf with this mixture. Sprinkle with wheat flakes. - I skipped this stage.
  • Make 8 cuts on top, dividing the loaf into 8 segments ***. - I cut it into 6 segments.
  • Put the bread in the oven. Reduce the temperature to 220 * C. After 10 minutes, subtract to 200 * C. After 10 minutes, reduce to 180 * C and bring to readiness. The total baking time is 30-35 minutes.

  • We ate this bread, some with what. And with cheese, and with condensed milk (I have such "aesthetes" in my family), with Mascarpone and with dried venison. Everything was very tasty, unusual!

Note

*** The baking cuts do not diverge much. This is normal. The bread is cut into segments in order not to cut it when feeding it, but to break it along the intended incisions.

You can also bake this bread in a bread maker. Just not taking out the dough. In Basic Mode.
