Chocolate biscotti

Ingredients

egg 1 PC
yolk 1 PC
granulated sugar 100 g
butter 60 g
cocoa powder 100 g
wheat flour 220 g
salt 0.25 tsp
baking powder 1.5 tsp.
bitter chocolate (75-90%) 70 g
nuts 100 g
ground ginger (optional) 1 tsp
vanilla sugar 1 tbsp. l.

Cooking method

  • I suggest trying another biscotti, this time with chocolate.
  • Chop nuts and chocolate not very finely. I had fresh almonds, so I first dipped it into boiling water for a few minutes, then drained the boiling water, added cold water to the nuts and left for a couple of minutes, after which the peel from the almonds is easily removed. Put the peeled nuts on a paper towel and pat dry.
  • Beat the softened butter with granulated sugar and vanilla sugar, add the egg and yolk, beat for at least another minute.
  • Mix flour with cocoa, baking powder, salt and ginger. Sift the flour mixture into an egg-buttered mass and knead the dough. Add chopped nuts, chocolate and knead again.
  • Grease a baking sheet (or form 22x12) with a little oil, cover with baking paper. We spread the dough with wet hands, forming a "bar" out of it.
  • We put in an oven preheated to 180 (convection 160) degrees and bake until tender for about 30 minutes. The toothpick comes out dry from the finished "bar". Let cool completely.
  • Cut into slices about a centimeter thick, put on a baking sheet (with baking paper) and put in the oven, preheated to 150 (130 convection) degrees to the highest level. Bake for 10 minutes, then turn the biscotti to the other side and bake for another 10 minutes.
  • Allow the prepared biscotti to cool completely.
  • Serve with tea or a mug of milk.
