Ingredients

Wheat flour (in dough) 2 ¾ Art.
Sugar (in the dough 4 tbsp. L., 4 tbsp. L. In the filling) 8 Art. l.
Salt (in dough) ¼ h. L.
Yeast (in dough, dry) 2 ½ tsp
Milk (1 tablespoon in the icing, the rest in the dough) ⅔ Art.
Butter (for dough 60 g, for filling 60 g) 120 g
Vanillin (in dough) pinch
Egg (in dough) 2 pcs.
Lemon zest (with filling) 3 tbsp. l.
Orange zest (filling) 1 tbsp. l.
Powdered sugar (in glaze) ⅓ Art.
Cream cheese (in glaze) 80-90 gr
Lemon juice (in glaze) 1 tbsp. l.

Cooking method

  • Add yeast to warm milk and 1 tbsp. l. sugar and leave for 10 minutes.
  • Add eggs, the remaining granulated sugar, soft butter, vanillin, salt, sifted flour to the milk with yeast.
  • Knead the dough well with your hands or in a bread maker.
  • Cover the dough and leave for 30-40 minutes to rise.
  • Next, we prepare the filling.
  • Stir the sugar, lemon and orange zest. The zest should let the juice go a little.
  • Cooking the icing. We use cream cheese for the glaze. Mix well the cream cheese, icing sugar, milk, lemon juice.

  • Cover the rectangular form for a cake or for bread with parchment, grease with butter. Roll out the dough into a rectangle measuring 50x30 cm. Grease the dough with melted butter and then the filling.
  • Cut the dough into 5 identical rectangles about 30x10 cm in size. Fold the rectangles on top of each other. The result is a stack of 5 rectangles.
  • We cut the stack across into 6 rectangles about 10x5 cm in size. Place the stacks in the form with the cut up. Cover with cellophane and leave to rise the dough 2 times.

  • By this time, you need to preheat the oven to 180-190 ° C.
  • We bake our pie for about 40 minutes.

The cake is excellent. I report: you need 2.5 cups of flour, otherwise the dough turns out to be crumbs. Sugar for the filling needs twice as much, at least 1.5, and the zest is somehow poorly measured with spoons while it is raw, so I figured out that you need 2.5 lemons per zest and 1.5 medium oranges, or one huge ... I worked on it along the way, thanks to the members of the forum for being taught to think)) And you can take any cream cheese (I have Viola). And in general, my children called this cupcake "lazy cinnabon", the technology is the same, only the filling is different.
