Herring ceviche

Ingredients

slightly salted herring 100g
Apple 50g
cucumber 50g
red onion 20g
ginger 10g
chili pepper (bulgarian) 10g
cilantro (parsley) 10g
beet leaves (pouring any salad) 50g
sugar 1 tsp
garlic 1 clove
soy sauce 1/2 tsp
light grape vinegar 1 tbsp. l.
vegetable oil 1 tbsp. l.
lemon juice 1/2 pc
Cherry tomatoes optional

Cooking method

  • On the eve of the new year, we arrange a small buffet and see off the outgoing year. For the buffet table I offer herring ceviche - a national dish and the pride of Peru. Ceviche was originally invented by sailors. Now it is known in many countries and has many interpretations. One condition in ceviche is invariable - it must be made from very fresh seafood.
  • Cut herring into thin slices, sprinkle with sugar and pour over with vinegar.
  • Dice the apple, cucumber and pepper, and cut the onion into rings. Crush the garlic, mix with lemon juice, soy sauce, grated ginger and cilantro. Add beet leaves (can be replaced with leaves of any salad) and mix everything thoroughly.
  • Garnish with lemon slices, cherry tomatoes (optional) and serve with an aperitif.

Note

From the juice that is formed in the ceviche during its preparation, you can prepare an aperitif. The Peruvians call it "tiger milk" (leche detigre). It is mixed with a little alcohol (Peruvians call it "pisco") and served with the addition of sour orange juice if desired.
