Ingredients

Rack of pork ribs 300-350 grams (meat)
Smoked pork ribs 2-3 pcs. small (for smoked smell)
Fresh cabbage 150 grams
Potatoes 2-3 pcs.
Dried vegetable mix pinch
Fresh parsley (dried) 1-2 tbsp. l. taste
FRYING VEGETABLES
Bulb onions 1/2 pcs.
Fresh carrots 1/2 pcs.
Sweet pepper 1/2 pcs.
Ripe red tomatoes 1 PC.
Vegetable oil 1-2 tsp for sautéing
Beet roasting
Dark red beet 1 PC. big
Tomato paste 1 small jar 75 grams
Aromatic vinegar (lemon juice) 1 tbsp. l. taste
White sugar 2-3 tsp taste
Salt, spices taste

Cooking method

  • First, I prepare vegetable frying. Enable BAKING mode, add vegetable oil, heat the pan, add the vegetables, cut into pieces and sauté until the liquid evaporates. Disable mode.
  • Add to frying meat, cabbage (chop finely, thinly), potatoes in pieces, water, salt, a mixture of dried vegetables, turn on BOIL mode, pressure 3, default time 40 minutes and bring it to readiness. Pork cooks quickly, so the default 40 minutes is sufficient.
  • While the pressure is released, prepare the beetroot frying in a pan. We put the pan on the fire, add the beets (grate), a little water to cover only half of the beets and simmer until almost completely evaporated. Now I add tomato paste, vinegar, sugar, salt, and taste it so that everything suits my taste. Carcass for several minutes, until the liquid evaporates.
  • During this time, the pressure will be reduced, then I reset the pressure cooker programs, open the lid of the pressure cooker.
  • I add beetroot frying, parsley to the borscht (light like ordinary cabbage soup), check the taste, stir with a spoon, and turn on STEAM mode... In this mode, the liquid heats up quickly, and my borsch is hot, so the liquid begins to boil quickly. I boil the beets in the borscht for just a few minutes, just to boil and turn off the pressure cooker.

  • I do such an operation with stewed beets so that the color of the borsch remains red, not overcooked. If you cook borscht right away with beets, then there is no guarantee that the color of the borsch will remain bright red. And then, it is better to add vinegar, sugar to borscht at the end of cooking than at the beginning of cooking, along with meat.
  • Let the borscht insist, as it should!
  • Pour the finished borsch into plates, add fresh onions, chopped garlic, sour cream and serve!
