Jellied Mushroom Heart

Ingredients

Mushrooms (honey agarics) 2 tbsp. l.
Salt taste
Peppercorns, cloves, allspice 1-2 pcs.
Water 150 ml
Homemade mayonnaise (sour cream) 6 tbsp. l.
Carrots (steamed or boiled) 1 PC.
Parsley root (steamed or boiled) 1 PC.
Celery root (steamed or boiled) 1 PC.
Parsley 2-3 twigs
Gelatin 10 gr.

Cooking method

  • Boil mushrooms with salt, cloves, pepper.
  • Pour boiling mushroom broth over gelatin (50 ml).
  • Cut out hearts and flowers from carrots. Chop the rest of the carrots and vegetables.
  • Lay out the carrot and parsley pattern in the forms.
  • Combine the jelly mass (5 hours l.) With 6 tbsp. l. mushroom broth. Fill the drawing in the form, adjusting it with a skewer.
  • Refrigerate for 15 minutes.
  • Connect 6st. l. mayonnaise / sour cream with 4h. l. jelly mass. Pour over the cooled patterned layer.
  • Refrigerate for 15 minutes.
  • Place carrot flowers and parsley leaves on the sides of the mold.

  • Lay out the mushrooms and chopped vegetables.

  • Combine the remaining broth and jelly mass. Pour over mushrooms.

  • Refrigerate for 30-40 minutes. And you can serve it on the table.

Note

Mushrooms can be used not only fresh, but also salted. They still need to be boiled lightly to get broth.
