Ingredients

Lamb ribs
Vegetable oil
Garlic
Coarse salt
Freshly ground black pepper

Cooking method

  • Finely chop the garlic and grind with a tablespoon with a part of salt into a gruel, add a couple of tablespoons of vegetable oil, let it brew a little.
  • In the meantime, the ribs, if they are not separated from each other, cut, cleaned from excess fat.
  • Grease the ribs with infused garlic oil.
  • Put on a baking sheet (you do not need to grease it).
  • Season the ribs with coarse salt.

  • It is advisable not to use fine salt, or to salt it after baking, since it can draw out all the juice from the meat.
  • Bake in a highly preheated oven (220-240 degrees C) until golden brown. Can be flipped once. It will also be very convenient to bake on a wire rack above a baking sheet to collect the melted fat.
  • Season with freshly ground black pepper and chopped cilantro before serving. Serve hot (!) With tomato and onion salad.

By the way, do not rush to drain the fat immediately after cooking, especially into the sewer, since the pour point of lamb fat is high enough and you can simply clog your sewer. If you leave the baking sheet to cool, then the fat will quickly solidify just at room temperature, and it can be cleaned off and thrown into the trash without the risk of clogging.

For the same reason, it is not recommended to drink lamb with cold drinks, best of all tea - green, black, fruit.
