Ingredients

Filling:
apples (medium) 4-5 pcs
apricot jam (jam) 100 g
Calvados 50 ml + 1 tbsp
water 150 ml
light honey 2-3 tbsp
Dough:
flour 300 g
butter 200 g
powdered sugar 100 g
vanilla sugar 0.5 h l
pistachios, powdered sugar for sprinkling

Cooking method

  • 1. Prepare shortcrust pastry using the above ingredients. Distribute according to the shape, raising the side by 1-1.5 cm. Cover the shape with cling film and refrigerate for 30 minutes.
  • 2. Peel, core and cut the apples into eights. Boil the syrup from water, calvados (50 ml) and honey and blanch the apple slices in it for 5-7 minutes. The apples should have time to soak in the aroma, but not lose their shape. Then fold it over a sieve and drain off excess liquid.
  • 3. Stir the apricot jam with 1 tablespoon of Calvados (if using jam with fruit pieces, puree it with a blender). Distribute the resulting mixture over the dough, put the apple slices and put in an oven preheated to 180 degrees.

  • 4. Bake for about 45-60 minutes, sprinkle with pistachios 10-15 minutes before the end of baking. Sprinkle the finished, completely cooled tart with icing sugar.

  • Instead of Calvados, cognac can be used in this recipe. Baked in a mold with a diameter of 26 cm.

Dana, butter, of course, cold, cut into small cubes. You can grind it with your hands, you can use a blender. I grind with my hands, having previously mixed flour with powdered sugar. I knead the resulting crumb (also with my hands) until smooth - the butter under warm hands becomes plastic and the dough quickly enough gathers into a ball. Then, again with my hands, I distribute it in shape.
I never use sugar in this test, because it gives a completely different result.

And I follow apples all the time during blanching. And as soon as I see that they have slightly changed color, I try not to miss a moment. In the recipe, I indicated the average time for hard varieties. Sometimes it takes even longer and sometimes less. I keep the apples over medium heat, do not cover with a lid.
