Fresh or dry yeast 15 g or 2 teaspoons
Granulated sugar 1 tbsp. the spoon
Salt 0.5 tsp
Olive oil 3 tbsp. spoons + for greasing the bowl
Sauce:
Tomatoes 5-7 pcs (depends on the size)
Garlic 3-4 cloves
Salt, ground black pepper taste
Olive oil 2 tbsp. spoons
Capers (optional) 10 pieces
Filling: an option for a husband
Chicken fillet
Champignon mushrooms)

Cooking method

  • This is a recipe from the book "Italy. Food and Dolce Vita". Our family loves pizza, and I cooked it often. But something always did not suit: the dough is sour, then it does not crunch, then something else. This time I decided to try baking according to the recipe from this book. And for the first time, I got a pizza dough just the way I like it. I decided to share with you, maybe it will come in handy for someone.
  • Dough:
  • Here everything is without wisdom. Mix everything, knead it properly. The dough is soft, non-sticky. Grease a bowl with olive oil, roll a lump of dough in it so that it is covered with oil on all sides. Cover and leave to rise for 1 - 1.5 hours (or in the refrigerator for 8 hours).
  • Sauce:
  • You can, of course, take ready-made sauce or ketchup. But we like homemade more. Grind the tomatoes and capers in a blender. Heat olive oil in a frying pan, squeeze the garlic through a press (or chop with a knife) and fry in oil for 1-2 minutes. Pour chopped tomatoes, salt and pepper to taste. Evaporate the liquid over high heat (until sour cream is thick). It takes me about 5-7 minutes.
  • Filling:
  • I don't write the number of ingredients - I take everything "by eye" and to taste.
  • Option for a husband. Cut the chicken (or pork, or turkey, or whatever you like) into pieces and quickly fry over high heat.
  • Chop the onion, fry in vegetable oil, add the chopped mushrooms, season with salt, pepper and cook until the water evaporates.
  • Grate the cheese. Chop the olives.
  • Option for me. Mushrooms with onions are what remains of the first option. Chop the pepper, olives. Grate the cheese. Finely chop the dill.
  • Assembly:
  • Divide the dough into 2 parts. Roll out into a cake with a diameter of 30-35 cm (I have a 33 cm shape). Form the sides. Brush with olive oil to keep the dough from getting wet from the filling. Brush with sauce. Lay out the filling in layers: chicken-mushrooms-olives-sprinkle with thyme-cheese or mushrooms-pepper-olives-sprinkle with dill-cheese.
  • Bake in an oven preheated to 220 ° C for 15-20 minutes until browning.

Yes, I know oregano. On the windowsill it grows next to thyme, rosemary and lemon balm. I use oregano a lot in other dishes. And in this case, for my taste, it is the thyme that fits better.I personally do not know Italians, but judging by the books of Italian chefs (Bontempi, Galli, Mellino, etc.), adding oregano to pizza is not at all necessary. Especially now I looked in books, found only in 4 of 18 recipes
