Chicken cutlets in white croutons

Ingredients

chicken fillet 400-500 g
mayonnaise 2 tbsp. l.
eggs 2 pcs
starch 1 tbsp. l.
loaf (preferably stale) 1/2
salt, seasonings (paprika) to taste
sunflower oil for frying

Cooking method

  • I found the recipe on the Internet and slightly modified it.
  • Finely chop the fillet, add eggs, mayonnaise, salt and seasonings to taste, mix well and add starch (+ I added a little more flour). Cut the loaf into small cubes. Then we take a little "minced meat" and roll it in croutons on both sides (I poured some croutons on my palm, then put the minced meat on them, then more croutons on top and formed a cutlet). In any case, in the end I already got the hang of sculpting cutlets)))). Put the cutlet in a preheated bowl (or in a frying pan) with butter and fry on both sides.
  • To be honest, I was afraid that they would not fry inside, so I decided to put them out a little.
  • On the lower level, I put potatoes cut into large pieces (for mashed potatoes), poured some water with seasonings and salt, put cutlets on top (on a steamer stand) and put them on the Porridge / Steam mode for 13 minutes under pressure.
  • On the cutlets, in theory, there should be crunchy croutons, but here they turned into dough / batter. Interesting taste. My husband and his sister really liked it.
  • Next time I will try baking to keep the croutons crisp.

dayki, thanks for the recipe. I make it similar to a frying pan, but instead of starch I add flour and do not bread - I bake like pancakes (chops). It will be interesting to try your version with breading.
