With a large invasion of zucchini this year, I also tried to fry pancakes from them with cottage cheese. Cottage cheese was added about a third of the zucchini volume, instead of flour - semolina. And maybe you grated the zucchini, kneaded everything, and the dough stood and gave water. This always happens, since the zucchini begins to produce juice. Therefore, you need to either make the dough and bake immediately, or then add a little more flour / semolina. Here, of course, you need to feel the consistency. When too much flour is too bad. What you described is just a still from a horror movie! I sympathize, I hope that at least no one was hurt by the oil splashes. By the way, I pour a little oil into the frying pan, not so that the pancakes would float in it.And I bake on low heat (slightly less than medium) under the lid. But I have never had such an outcome as you have. I could not even imagine this.
