Cooking method

  • all vegetables are cut into small cubes - and then, of course, the hostesses of the Bosch cube come out triumphantly :))
  • only three carrots on a coarse grater - the so-called. beetroot.
  • here is the ready-made soup in a spoon so that the size of the cube is clear:

  • cook potatoes and peas separately. peas in salted water until soft.
  • fry bacon in a saucepan in a large amount of olive oil, do not brown. add garlic, onion, grated carrots, fry a little, do not blush! then add celery, fennel, hot peppers without seeds, basil stalks. simmer under a lid over low heat for 10 minutes.
  • add bell pepper and zucchini, simmer for 5 minutes.
  • tomatoes in a blender, scroll until puree. add to the pan, bring to a boil, simmer for 5 minutes.
  • add tomato juice, bring to a boil.
  • add boiled potatoes and peas, it is possible with the water in which they were cooked, cook for 5 minutes.
  • dilute with boiling water to the desired density. salt and pepper to taste. Boil over low heat for an hour, let it gurgle only slightly.
  • when serving, sprinkle with finely chopped basil leaves and grated Parmesan.

I also make this soup, mine also all eat it, although usually they don't eat soups, you bastards... Only I do it without any meat, and without tomato juice, although the juice will not spoil, of course. And I don't put fennel, which is interesting. In the next. I'll put in fennel. In general, this soup is wonderful and accepts any vegetables and in any quantity (well, except, maybe, beets and cabbage). I also put in the red beans, cooked beforehand.
