  • I pour in a little vegetable oil, wait for the pan to heat up for about 5-7 minutes, put the meat and fry it from all sides until blush, including from the ends.

  • The pan heats up to 140-142 * C and the temperature changes depending on how cold the meat is when you turn it to fry. The temperature dropped to 124-130 * C and recovered in a couple of minutes.
  • It took about 30 minutes to fry a roll weighing 1100 grams from all sides, including the ends. Next, I turn off the multicooker.
  • 2. Cut pepper, onion, carrot into strips, put in a saucepan and sauté a little while the meat is browning

  • 4. I close the lid of the multicooker, install TURNING mode, pressure 3 (high), time 1.50 - let's go, we'll wait for what happens!))
  • Comment:
  • When turned on, the pan was hot and the temperature immediately set to 111 * C and pressure quickly gained, in 4-5 minutes, the valve rose. During this time, the temperature rose to 117 * C and then stably kept at this level.
  • The multicooker works very quietly, only small clicks of the timer switch are heard.
  • Sometimes I had to bend over to the valve in order to understand there is movement inside the device, whether it works)), inside you can hear a quiet gurgling and you can see how at times a small scattered steam comes out through the valve.
  • 25 minutes before the end of the program, the temperature begins to decrease, and gradually decreased from 117 * C to 96 * C, the inscription END is displayed and then the multicooker goes to heating with a temperature of 73 * C. At the same time, there is no violent emission of steam by a jet, with a hiss - the pressure drops slowly and silently!
  • 5. Time is up, I open the lid

  • A lot of juice and fat leaked out at the bottom, about 300 ml. Therefore, it is quite possible to simmer the meat in a piece in a slow cooker without liquid.
  • 6. Let the meat cool until warm, right in the pan, under the lid. Then I take out the meat, check the readiness with a thermometer - 90 * C, this is a lot for meat, but it's not scary for the first time, then I will focus on a shorter cooking time.
  • I make warm ham slices, taste

You don't have to buy ready-made! You can take any suitable piece of meat: puff low-fat brisket, carbonate, ham, neck. Make a suitable liquid marinade, or simply sprinkle with salt and spices to taste and hold in a bag in the refrigerator for 12-24 hours, and then simmer in a slow cooker according to the same principle as me, without water.
