Veal brisket with vegetables, stewed in the Oursson slow cooker

Ingredients

Veal brisket 400-500 grams
Bulb onions 1 PC.
Fresh carrots 1 PC.
Sweet pepper 1/2 pcs.
Ripe red tomatoes 2-3 pcs. Used ½ can of canned tomatoes in its own juice
Fresh potatoes 4-5 pcs. middle

Vegetable oil for sautéing vegetables, roasting meat
Parsley 2-3 st. l. chopped
Salt, spices taste

Cooking method

  • 1. Meat veal brisket, cut into large portions. Rinse the meat, drain off excess water so that the meat is dry, thus it will brown faster.
  • 2. I turn on the multicooker in the mode Bakery products, the default time is 1 hour. I heat up a saucepan with vegetable oil (1 tablespoon) for about 5-7 minutes, add the meat and fry until golden brown. I fry with the lid open (removed).
  • My observations: in this mode, the pan heats up to 135 * C by default, and the temperature ranges from 114 to 135 * C. The temperature decreases if I add fresh food to the pan, for example, add vegetables, then tomatoes - while the temperature drops to 114 * and then increases in a couple of minutes to 135 * C. This temperature fries the meat carefully, but I would like to increase it, next time I will set the temperature by adjusting it manually, this can be done when the program is turned on.
  • 3. After frying the meat, add the vegetables, cut into pieces, fry with the meat, stir occasionally. The cover is removed.

  • 4. I add tomatoes in pieces in my own juice from a can, salt, spices to taste, carcass with meat and vegetables until the liquid evaporates. The cover is open.
  • 5. Deactivate the Bake mode by pressing the Stop / Cancel button.
  • 6. Add potatoes, chopped into small pieces, chopped parsley, water, salt (if required to taste) into the pan.

  • 7. Turn on the Simmer mode, pressure 3 and bring the meat to readiness.

  • My observations:
  • A). In this mode, you need to cook tough meat, or meat in large pieces. By default, when the program starts, the time is set to 1 hour, the pressure must be set yourself. Since I have veal in pieces, I set the pressure to 3 (high).
  • B). When the mode is started, the default temperature is set to 101 * C immediately (the pan was still hot after frying), and then at 52 minutes (timer countdown) the temperature is set to 117 * C and then during the whole time it fluctuates 115-116 * C, then there is maintained at this level. At first, something gurgled strongly in the pan, then when the pressure was set, the temperature was set to 117 *, the gurgling stopped and there was an "oppressive" silence until the end of cooking. I realized that the longing had begun!
  • Then I missed the time (although I checked it several times in the interval, it was 115-116 * C), but 10 minutes before the end of cooking, the temperature was already 105 * C.
  • IN). After the readiness signal, the pressure from position 3 was removed automatically, by the multicooker itself, to the “no pressure” position, the smallest one remained, which I dropped myself in one minute. Then the finished dish goes into the Heating mode at a temperature of 73 * C and which can also be adjusted manually.
  • D). Proceeding from this, I realized that the total cooking time, for example, on this program "Simmer" in the default 1 hour, includes a set of pressure (about 8-10 minutes), cooking, pressure release (I did not track the time).This must be taken into account when preparing a dish, if a piece of meat is, for example, large, then the cooking time will need to be immediately increased.
  • D). I liked that you can adjust the pressure from 0 to 3 during the cooking process.
  • And you can cook at 0 pressure with the lid closed, when the cooking mode is the same as in a conventional multicooker, without pressure - the cooking mode is gentle.
  • Now, while such observations are still ahead!

Note

And the meat turned out to be very tasty! Soft, gravy-broth of rich color, taste, stewed! The potatoes are not soft!
And, pay attention to the lid after cooking - it is clean !!! And this is at a temperature of 117 * C !!!! Chic, shine, beauty !!!!
