Mushroom cake Memory of the future

Ingredients

Boiled mushrooms, chopped 500 ml
Small squash 2 pcs
eggs 2 pcs
semolina 2 tbsp. l. with a slide
mayonnaise ~ 150 g
salt taste
olive oil as needed

Cooking method

  • The most delicious supplies are always reserved for the New Year's table. And now, let's look into the freezer, find the boiled mushrooms stored up for the solemn occasion ... Let us be astalgic - oh, what honey mushrooms were! But these Polish whites - there was a whole clearing of them, so lucky !!! In general, we collect the assortment, defrost it, lightly fry it in a pan with olive oil to evaporate the excess liquid, and grind it in whatever we like: in a chopper, blender, meat grinder. I got 500 ml of finished chopped mushrooms.
  • Add a couple of tablespoons of mayonnaise, two beaten eggs, two, with a small slide, tablespoons of semolina and leave for half an hour so that the semolina swells. Yes, and we must add salt to taste.
  • While the mushroom dough is standing, cut small zucchini as you like - in circles or halves of circles, fry them in a pan with olive oil, salt only after they are ready, and put on a paper towel so that the glass will have excess oil.
  • Grease the multicooker pan (I have a small one, 2.5 liters) with olive oil, pour out the mushroom dough, put it on the "Baking" mode for 65 minutes. After the signal, open the lid, let it stand for 10-15 minutes. Ideally, it would be nice if the mushroom cake is at least half cool. Turn it over with the help of the steamer insert on a plate, let it cool completely.
  • Then apply a thin layer of mayonnaise with a flat knife, lay out beautifully fried zucchini, slightly decorate with mayonnaise on top. We put it in the refrigerator for the night ...
  • Phew ... one appetizer for the New Year's table is already ready for us!

The recipe was born, as always, "from what was" ... Or rather, it was necessary to "dispose of" urgently, since it did not fit into the freezer. But unexpectedly it turned out not only quite edible, but also delicious! A great alternative to the usual mushroom caviar on the festive table. I love the combination of mushrooms and zucchini very much - it is light, not as satisfying as with potatoes, no need to figure out what to serve this caviar with, what to smear on ... Serving, cutting is convenient, the pieces do not fall apart, they keep their shape well. And the semolina is not felt at all, the full impression that the mushrooms are in their pure form.

I also want to write why the recipe was called "Memories of the Future." At the New Year's table, we will definitely remember what good things the outgoing year brought us - all the joys of personal life, a successful vacation, a generous mushroom season (this is where there will be a toast - "under the fungus!"). About "Memories of the Future" - I forgot to write Just New Year - this is the very time when, on the one hand, we sum up the past, and remember what good happened. Now, now it is mushroom autumn, everyone who could and wanted to went to the forest, "came off" in white, aspen mushrooms, mushrooms ... This is what we will remember. In general - "Memories of the future - it was such a movie in my childhood, about prehistoric life. It then struck me with literally everything - from the paradox of the title to the plot.

Now about the composition of the mushrooms. I have mushrooms there, Polish whites, mushrooms, boletus ... a little bit of everything. The cake was about 2 cm high.
For a big cartoon, I think you can make a one and a half and double portions.
