  • Wash the tomatoes, peel them, cut off some places, tails, be sure to dry them on a towel to get rid of the water on them after washing.
  • Fold the tomatoes into plastic bags, tie the edge of the bag, smooth inside.

I've heard that it is better to freeze pizza in circles. That is, first cut, put in one layer, freeze, and only then pour everything into a bag.
Can whole tomatoes be used for pizza? How to cut them later? It's just much more convenient to freeze whole ones.
Admin

It depends on how often you make pizza in the winter. You can freeze the cut bag. In general, if you hold frozen tomatoes for a minute in warm water in a mug, they will become a little more subtle (but will not defrost), the skin comes off well from them, and they are easily cut into circles.

Thank you so much! And I didn’t know that tomatoes can be frozen

Thanks for the idea! It would be nice to get hold of the freezer, so that everything you want would fit there

I now freeze it for pizza. My son doesn't like it when tomatoes are on pizza with peels, so I dip them in boiling water for a few seconds, then peel them off, cut them into slices and freeze them on silicone on a small rug. A few hours later, when it is frozen, I transfer it to a container and prepare a new batch.

And you try to do a little, like Admin, whole. Fast, the peel itself peels off and is cut easily when they are slightly defrosted

So try it now, while there are still ground red tomatoes! You will not regret it, and I think you will get sick with this type of conservation, you will do a lot every year

Someone on the forum wrote that a freezer is not needed

Needed, still needed! Just for such preparations for daily use, for tomatoes, peppers, which we use every day for pizza, cabbage soup, stewing - many dishes cannot do without tomatoes and peppers, they look not tasty!
I have a large refrigerator, and a separate freezer for 6 drawers, and everything in the winter is packed with what will be in demand in winter, to taste! And it's better, tastier, more practical than putting greenhouse vegetables in food in the winter.

It's my opinion

Admin, thanks for the idea! I have never frozen tomatoes, even though the thought of it haunted me. Strongly in winter, the lack of tomatoes is felt when I cook borscht, stuff peppers (self-frozen).
Buy tomatoes on the weekend and put them in the freezer. Problem - there would be enough space in it ...

Thanks for the tomato idea! We just had an acute question about buying a second freezer. The first is filled to capacity. I will definitely freeze these tomatoes for the winter.

And how to live in the world when it is already full, and you still want to freeze so much? How to convince your husband to buy at least one more refrigerator, but with a large freezer?

Or maybe a second freezer is more practical? In refrigerators, freezers are small, only 2-3 boxes, and they take up space! And the freezer is the same size, but there will be more boxes, 6-7 pieces !!!!!

Girls, thanks! Think in the right direction - you need a freezer at home, and peppers with tomatoes in it are also needed and preferably more!

We have a freezer with 10 drawers in the garage, at home there is a refrigerator with 4 cameras. And now my husband chose a chest-type freezer, with a hinged lid for 300 liters. To take him to the dacha in the spring, and to take him away from the dacha in the fall with frozen products. (it takes 5 hours to get to the cottage).

The husband will definitely not agree to the second freezer, but there is still a chance to beg for the second refrigerator, since the existing one is 17 years old. I picked it up with the largest freezer, I conduct systematic processing.

Something I thought about the need to buy a second freezer ...
One is already stuffed with frozen fruit and jars of grated berries with sugar. And I still have to freeze the peppers and now it turned out - tomatoes!
Can I freeze eggplants? .....
korsar
I also always freeze tomatoes: in circles for pizza, pieces with 10 large and fleshy ones for roast, and also grate them without skin and pour plastic bowls for borscht into 0.5 liters. Very tasty in winter !! I have been dreaming about a freezer for a long time, but nothing: the birthday is approaching, the order is made, I WAIT ...

Can I freeze eggplants? .....

You can, in whole and in pieces - as you like and for what it is needed!

You can freeze almost all vegetables, it all depends on your preference for them and the expediency of doing this
Altusya
But I also did not know that you can freeze tomatoes. Pepper yes, but for tomatoes
But, the place is gone, I'll lick my lips.

You can freeze anything (zucchini, eggplants), except potatoes.

I twist the tomatoes and herbs and pour them into ice bags !!! He pulled out a few cubes or added them to the frying, or threw them into the soup.
Admin

I like to add slices of tomatoes to frying, cut from a whole tomato. And in general, there are many recipes where a whole tomato is required, and not its puree. For example, I like in cabbage soup, pea soup, put whole pieces, sweat looks nice and there is a tomato taste.
And I have a prejudice that mashed tomatoes do not have the taste that a whole tomato should have.
But, that's just my opinion
annnushka27
I also love, especially in borscht, except for grated tomatoes, just cut a couple more into pieces.

Forgive me for not being in the subject (if there is a way, then indicate where), but how to freeze parsley? For once this year, she both rose and grew. On the trail. I can't leave the roots in the garden for a year - my husband rested, I will plow, they say. And it's a pity - so funny, curly. And we won't eat the whole green one.

I am now ice-cream parsley. I just cut it and put it in a jar, tamp it, I do the same with dill. Then she calmly takes a spoon, crumbly. I didn't like the bags and foil.

Rinse the parsley with water, dry it in the air from excess moisture, cut it with a knife of the required size (better not quite finely), fold it into bags, press it tightly to release excess air, roll it up tighter and put it in the freezer until winter. Then you will open the bag, take the right amount for cooking, tie the rest up again and put the rest in the freezer.

OK! All clear. I do the same with dill, only my bags are zip-lock, with a latch. And I haven't tried ice cubes yet, and there is no place anymore. Yes, dreams of a dimensionless freezer are not alien to me ...

And I found a place in the freezer, bought tomatoes - cream, today I will freeze !!!

About eggplants: first try to freeze one piece, and after a few days make some ice cream from it, and then decide whether you need to cook it for future use and whether you need so many eggplant ice cream
lillay
Thank you Admin!
I just found a topic about everything frozen, I'm studying. Reviews of defrosted eggplants are controversial: some like it, some don't. I will do, as you advised, a little to try. Moreover, eggplants will still be on sale.

For parsley, dill, celery, I first manually separate the tough stalks - I throw them away, I ice only the actual leaves

And I, on the contrary, like to make flat bags more. Especially with berries and herbs. When they completely freeze, I shake them gently in a bag and they fit more compactly.
: (Only space is still not enough. And then there is her husband's fish!

That's it, I did it yesterday - I put tomatoes (whole) and peppers prepared for stuffing in the freezer. I did so much that the free space found in the freezer ran out .... I froze the tomatoes for the first time, as I start using, I will report on the impression.
Thanks again to Admin for the idea of freezing tomatoes!

No, that's not all, sorry! Now we go to the topic of refrigerators, we will choose a freezer, boxes that way for 6-7, and run with a centimeter, look for a suitable place for it

I also freeze tomatoes In the fall, when everyone chooses large, no one wants small ones, I wash them in the freezer. And when I get it, 2 seconds under the tap in hot water, I run a strip with my fingernail and take off the skin very easily. And if they are not completely thawed, they can be easily cut into circles and cubes and as you like))

I ice tomatoes whole, somehow I like them better than sliced ones. In soup, stew meat, cabbage.

I use three methods to freeze tomatoes:
1) entirely. For this I use only cherry. I plant several types of them. I also freeze by varieties. Separately, yellow, black, red, round, cylindrical, cocktail, etc. I use them most often to decorate dishes. I put it at the very end of cooking. Tomatoes do not have time to creep, but they warm up. The meat baked in a piece with a frame of these tomatoes, poured with meat juice, looks especially impressive.
2) in circles. I put a plastic bag on a cutting board and put tomato circles on top. Then I pack it in a plastic bag and put it in the freezer. Then I freeze the next layer.
For this I take "dryish" varieties. For example, Khokhloma. This type of preparation is most often used for pizza, etc.
3) tomato pulp, which is obtained after making juice. I make tomato juice almost by hand. First, finely chop the fruits in a food processor, then rub them through a sieve. I mix the remaining cake generously with herbs, put it in ice molds and freeze. Then I pour them into plastic bags, remove air from there as much as possible and freeze them. I have several such packages. For example, there is with a mixture of herbs, there is only with parsley, only with dill, only with garlic arrows, etc. I use this type of preparation when stewing meat, vegetables, etc.

by the way, I watched an interesting video about sucking air from bags through a cocktail tube, there, too, tomatoes were frozen in bags ...
