Steamed marinated pork chop

Ingredients

Pork 2 pieces, about 1 cm thick. grams of 100-150
Water 250 ml
Sugar 1 tbsp. l. (25 gr.)
Vinegar 1 tbsp. l. (15 gr.)
Bay leaf 1 PC.
Black peppercorns 3 pcs.
Allspice peas 1 PC.
Ground black pepper
Salt

Cooking method

  • Beat the pork, salt and pepper. (Considering that meat that was salted in advance loses a lot of juice, I stepped back from the first point of the recipe and marinated just beaten pieces of meat. I salted and pepper a little before putting it in a double boiler.)
  • For the marinade, mix vinegar, water, sugar, peppercorns, bay leaf and boil the mixture in a water bath (I used the cereal container in the double boiler and the automatic bird mode - 25 minutes)... Put the chops in the chilled marinade for 2-3 hours.
  • Remove the meat from the marinade, put in a double boiler and cook for 25-30 minutes.
  • Serve with a side dish, garnish with finely chopped herbs.

The dish is designed for

2 servings

Time for preparing:

4 hours

Note

Steamed marinated pork chop
To my surprise, I discovered that there are very few recipes for a steamer on our website. And since now I have to give up fried as much as possible, I will allow myself to share with you the recipes that I liked. Maybe someone else will find them useful or interesting.

This recipe is taken from the book Steamed Dishes. Great Encyclopedia ”by IA Mikhailov, only remade for two. In this case, the part of the ingredients that belongs to the marinade could be further reduced.

Honestly, when I read the recipe, I did not understand why the marinade needs to be boiled. : girl_red: But, having rummaged in the net, I found out that the marinades are just divided into raw and heated. It is believed that when using the latter, the taste of meat is richer.
Raw marinades work faster. They are versatile, but they are especially good for cooking game, fish and vegetables. Large pieces of white meat are marinated in them for roasting on a spit. The heated marinade acts more slowly, but has a brighter taste. This marinade is for red meat, beef and game. The marinade should be brought to a boil over low heat, then turn off the heat and let the marinade cool to 30-35ºC. Then pour over the prepared meat
So I decided to try it.
I replaced the acetic acid with the juice of half a lemon, and since I like salted marinade, I also added a spoonful of soy sauce. And for the scent, a couple of crushed garlic cloves. The smell was incredible.

For a side dish, I had buckwheat with beets and carrots. (I put the washed buckwheat in a bowl for cereals, filled it with water, added a couple of frozen cubes of chicken broth, two small bay leaves, a few peas of black pepper. After the buckwheat had been cooking in a double boiler for 20 minutes, I added beets and carrots grated on a coarse grater. Then she cooked (or, more correctly, steamed) for another 15-20 minutes.) I once read the recipe for such buckwheat somewhere on the vastness of the network, now I can not specify the source.
