About apples... We dry for many years in large quantities. Cut into thin slices without a core. We store in cloth bags, glass jars, flour bags. I store it on a glassed-in loggia, mom in a kitchen cabinet in winter, in summer - on a balcony. Stored for 2-3 years.

Children buy all sorts of dried meat for beer. It's expensive. So I decided to do it myself. I read different recipes on the Internet and in the end I do this:

The meat is cut into strips 1 cm thick (can be thinner), along the fibers:

I take chicken breasts.

A mixture is prepared for salting (I give it based on a kilogram of meat):
1 tablespoon of salt with a slide + a tablespoon of salt without a slide, for a total of about 45-50 grams. Many recipes recommend less, 1 rounded scoop, 30 grams.
1 level tablespoon of ground coriander Again, you can do more - I give it to my taste. Coriander is the main seasoning in biltong.
1 heaped teaspoon of sugar (brown cane sugar is recommended for full aesthetics - but this will do)
1 teaspoon black pepper You can do more (I throw two), you can add red separately - again, to your taste.
! Salt is not iodized in any way - you need normal coarse rock salt!
Traditionally, a little soda is added there - I've never tried it.And during production on an industrial scale, saltpeter is added - well, again, this is not for us.

Sprinkle the meat with 6% wine vinegar, sprinkle evenly with the mixture on both sides, rub in, knead and mix thoroughly. We put it tightly in a stainless container - and under oppression for 12 hours. In the refrigerator, of course.
Juice stands out with might and main. It is not necessary to drain it - this is not dry salting. After half the time (that is, after 6 hours), turn the meat over, ram it again and press it again. In total, the whole marinating process takes only 12 hours. For salting meat, this is unusually small - but here it is about vinegar and thin slices.

Then we dilute 6% wine vinegar with water 1: 6. Dip the meat into it for 5 minutes, rinse, squeeze it properly.
I lay the pieces of meat on the grills of the airfryer (I take 4 pieces, I increase the volume of the airfryer with an expansion ring). Thus, the entire volume is filled. Usually I turn on the airfryer at the lowest temperature, the blowing speed is the highest. I do not close the lid of the airfryer tightly, I insert some kind of stick so that the moist air comes out. So I dry for five hours. You can open and turn the meat over to dry faster. In time, see for yourself how you like - the meat is very hard or softer.
Try it and you will succeed.
The main principle is clear, and spices are a matter of taste. But the meat is like from a store.
