Any will do, but should be pleasantly soft.
I have both pesto and store tomatoes.

So do it in the oven or airfryer - what do you have there?
Cut into halves, spread on a baking sheet with the skin down, pour with olive oil, sprinkle with salt, basil or oregano and dry at low temperature so that excess liquid comes out of them, salt will help. How to shrink - done! They will then have a very concentrated flavor!
I won't say about storage, maybe for this you need to withstand a special technology. And this option is suitable for short-term storage in the refrigerator, you can tamp it into a jar by pouring oil.

Nope, I know how they do it - what stops me - it's not enough to cut them into quarters, you also need to scrape the seeds with pulp with a teaspoon! Then put on a baking sheet covered with baking paper and put in the oven at T 100 degrees for 3-5 hours. Extreme! On TV the second day in the morning they show the method of drying tomatoes. Olive oil is poured over when pushed into a jar, and in layers - a layer of tomatoes, then oil, etc. It is desirable to store these tomatoes in the refrigerator.

And I do not bother taking out the seeds from tomatoes. I cut it into sectors and dry it in a dryer, and then add a lot of green basil, cilantro and parsley, salt, garlic and 2 types of oil. I taste it. I add what is missing. Believe me, shops are losing a lot! And you can store it and freeze it, and if not too long, then just in the refrigerator.

Girls, I brought pre-packaged bags of sun-dried tomatoes to my colleagues from Italy as gifts (I bought them in a gastro-boutique) - so they are there with seeds, nothing needs to be taken out!
Arka
Yep, exactly! My purchased ones, too, with seeds
