Lemon Buns (Panasonic SR-TMH18)

Ingredients

Dough:
dry yeast (Saf-moment) 1.2 tsp
wheat flour 380 g
granulated sugar 2 tbsp. l
salt 0.75 tsp
chicken eggs (large) 2 pcs
milk 130 ml
butter 40 g
Filling:
butter 3 tbsp. l
granulated sugar 4 tbsp. l
zest of two small lemons
Additionally:
granulated sugar 2 tbsp. l
nuts 2 tbsp. l

Cooking method

  • Dissolve salt, sugar in warm milk (you should not increase its amount in the dough, the rolls are already quite sweet), add eggs. Add flour gradually. Knead for at least 10 minutes. Add soft butter. Knead the dough thoroughly again.
  • When kneading the dough in a bread maker, load all the ingredients in a bucket except butter and a couple of tablespoons of flour. We select the "Pelmeni" mode. After 10 minutes, stop the batch, add the remaining flour and butter. Turn on the batch again and let the program run completely.
  • The dough is very soft and elastic. We leave it to rise for an hour and a half.
  • For the filling, mix the lemon zest, granulated sugar and softened butter.
  • We spread the dough on the table, roll it out into a rectangle 5-7 mm thick.
  • Distribute the filling evenly over the entire surface, fold the rectangle into a roll. With a sharp knife, divide it into 8 parts.
  • Grease the multicooker saucepan with a little butter and put the rolls in it, cut up.

  • We leave the buns for proofing in a slow cooker with the lid closed for 15-20 minutes. Sprinkle the buns with granulated sugar and finely chopped nuts. I sprinkled with ready-made nut filling for rolls.
  • We bake buns in a slow cooker for 40-45 minutes. Be guided by your saucepan. I did not like the pale appearance of the buns on top, so I turned them over and held them on the "baking" for another 10-12 minutes.
  • Put the finished buns on a wire rack and let them cool completely.
