"Baked" potatoes (Pommes de terre fondantes)

Ingredients

Potatoes (thin-skinned, small) 1 kg
Chicken broth, I have a vegetable 450 ml
Rosemary (twig), I have a pinch of coriander and pink pepper
Olive oil 2 tbsp. l.
Butter 1 tbsp. l.
Salt to taste
Green onions or dill

Cooking method

  • Do you want delicious potatoes ?! Then read this simple yet awesome recipe and cook it immediately! Here is what my friend Venus writes about this and I agree with her 100% !!!
  • Pommes de terre fondantes (melting potatoes) is an old French recipe.
  • The idea behind this recipe: potatoes are boiled in broth until tender, then pressed slightly until a crack appears - the opened potato pulp absorbs the broth, which makes the potatoes rich in taste and soft - “melting” in texture. After evaporation of the liquid, the potatoes continue to fry until golden brown. It tastes like potatoes baked next to meat, but it takes much less time to cook it.
  • These potatoes are good to serve with any baked meat or simply with a fresh green salad.
  • Wash the potatoes well and place them in a 25 cm Teflon (or cast iron) pan (there should be space between the potatoes).
  • Add the broth (the broth should cover the potatoes by 3/4), a sprig of rosemary (coriander and pink pepper), olive oil and butter, salt.

  • Boil. Reduce heat to medium and cover skillet loosely. Cook for 15-20 minutes until the potatoes are ready (the remaining broth should cover the potatoes by almost half).
  • Remove the skillet from the heat and crush each potato with a small cup or wooden crush to crack the potatoes (no effort, I overdid it!)
  • Return the pan to medium heat and continue to cook without a lid until the liquid evaporates, 10-15 minutes, the potatoes should brown a little. Gently turn potatoes over and fry on the other side, 4-5 minutes.

  • Remove the pan from the heat and leave the potatoes in it for 5 minutes.
  • Serve hot, sprinkle with green onions (dill).
