Whole grain rum biscuits (Biscotti Integrali)

Ingredients

Whole wheat flour 250 g
Butter, unsalted, room temperature 145 g
Brown sugar 125 g
Chicken egg, large 1 PC
Rum dark 30 g
baking powder 5 g
Vanilla extract 2 g
Salt 1 pinch

Cooking method

  • 1. Whisk butter and sugar until creamy.
  • 2. Add vanilla, rum and egg to the whipped butter. Whisk the whole thing for at least 2 minutes until smooth and airy.
  • 3. Preheat the oven to 180oFROM.
  • 4. Combine flour, salt and baking powder. Add the whipped butter, sugar and spice mixture to the flour. Mix everything well until smooth. If the dough is too wet, add a little flour. Form the dough into a ball, transfer it to a bowl, cover with a towel and refrigerate for 20 minutes.
  • 5. Line the baking sheet with baking paper. Lubricate the paper with butter.
  • 6. Sprinkle flour on the table. Put the dough on it and roll it into a layer 0.5 cm thick.Use a glass or a special shape to cut the cookies. Place the cookies on a lined baking sheet. Do not forget to leave a gap of at least 2-3cm between the cookies.
  • 7. Bake for 8 to 12 minutes. Cool the finished cookies on a wire rack.

    Mediterranean diet - not some specific system or instruction, but a collection of dietary habits and principles traditionally followed by the people of the Mediterranean.     • Mainly consumed are yoghurts made from skimmed milk and low-fat cheeses such as mozzarella, feta, halloumi, and Safed cheese. The yoghurt is also fat free.
    • Moderate consumption of red wine, usually with food (except in Muslim countries).
    • Consumption of fresh local seasonal products - vegetables, fruits and herbs is typical.
    • Sweets are not every day.
    • Active lifestyle.

By the way, diet is translated from Greek as "lifestyle".

Another option - you can diversify the cookies by adding the zest of one lemon or orange, or a mixture of lemon and orange zest to the dough. You can also add chocolate chips. There are such ready-made things especially for baking, they do not stir much when kneading the dough. Or add homemade crumbs, which you must first freeze in the refrigerator so that the crumbs do not stir with the dough, but remain in the form of pieces in the cookies.

Only I didn't put in the rum, we are adherents of a sober lifestyle.

The only thing I didn't buy was rum - I forgot it and replaced it with German tincture on oranges. It went great, but I didn’t translate grams into ml and didn’t translate it by eye, nothing like that - we don’t sing songs. How much is 30 grams of alcohol in ml? Help translate, otherwise I'll get drunk, I love these cookies and will do them often.
And the flour was whole grain spelled. Delicious nutty taste and aroma. Sprinkled after cooling the sugar. powder.
Next time I'll make it from a simple whole grain.
