Finnish potato tortillas Perunarieska

Ingredients

mashed potatoes 500 ml
butter (melted) 3 tbsp. l.
salt 1-2 tsp (taste)
sugar (optional) 1 tsp
egg (large) 1 PC.
baking powder 1 1/2 tsp
wheat flour 300-400 ml
or
wheat flour 250 ml
oatmeal (fast) 100 ml

Cooking method

  • Rieska is a yeast-free flat bread traditionally baked in Finland from oatmeal, rye, wheat, barley flour or potatoes. Potato tortillas are incredibly tasty and easy to prepare. All you need to bake them is a baking sheet and a few simple ingredients.
  • Note the recipe in ml!
  • Heat the oven to 230 C.
  • Mix flour with baking powder.
  • In a bowl, lightly beat an egg with salt, sugar and melted butter, add mashed potatoes and mix thoroughly.
  • Sifting flour in parts, knead the dough. Cover and set aside for 15-20 minutes.
  • Place the dough on a floured work surface (the dough is quite sticky) and divide into 8-12 equal parts.
  • Roll (or shape with flour-dusted fingers) each piece of dough into a circle 5-10 mm thick.
  • Pierce the tortillas in several places with a fork and place on a baking sheet covered with baking paper.
  • Bake for 15-20 minutes, until golden brown.
  • Serve the tortillas hot.

Fresh mashed potatoes can be replaced with 150 ml of powdered mashed potatoes (potato flakes), diluted in 250 ml of water + 250 ml of milk. The thickness and size of the flatbread depends on personal taste. The thinner the cake (traditionally they are baked thin), the drier it turns out. I prefer softer ones, so I roll out about 1 cm thick. Aromatic herbs or spices such as rosemary, anise, cumin, etc. can be added if desired. etc. Whole grain flour, oatmeal, spelled, any flour to taste can serve as an excellent substitute for oatmeal. In this case, just remember that the amount of liquid will vary depending on the type of flour, since each type of flour absorbs liquid differently.

She left the dough for 20 minutes, divided into 8 equal portions, rolled into a ball and kneaded with the palm of her hand, the dough is very tender and cooked cakes in a thermokuk. It turned out to be lush and very tasty!
