Raspberry vinegar

Ingredients

Raspberry fresh, ripe, red 300-350 grams
Fresh raspberries 10 beautiful whole berries
Apple cider vinegar 600-700 ml. or light wine

Cooking method

  • Ripe raspberries, sort out red, rinse quickly, dry from excess moisture. Crush in a bowl with a mortar until puree. It is better to do this with a crush or a spoon, but not with a blender!
  • A dozen berries, whole, beautiful, leave aside, take in the cold. I put the berries in the freezer for two weeks, just to keep them safe.
  • Heat the vinegar in a saucepan until hot, but do not boil, remove from heat. Add crushed raspberries, stir gently, cover and leave to cool completely.
  • Pour the mixture into a bottle with a ground (screw) cap, and remove in a dark place for 10-12 days.
  • Strain the vinegar through cosmetic discs into another bottle, add the whole raspberries (which have been set aside), close the lid and leave to infuse.
  • After 3-4 weeks, you can use raspberry vinegar.
