Sochi pie

Ingredients

Wheat flour 3 glasses
Butter 300 g
Eggs 4 things.
Sour cream 200 g
Soda 1 tsp
Walnuts and hazelnuts 300 g
Granulated sugar 1.5 cups

Cooking method

  • Knead a soft dough from flour, butter, three yolks, sour cream and soda, divide it into three parts and place in the refrigerator while preparing the filling. For the filling, beat three whites with sugar and mix with chopped nuts. If desired, you can add raisins, vanillin, cinnamon, etc. to it. Roll the dough into three layers in shape, and, putting layers into it, grease the first and second layers of dough alternately with filling.

  • Cover with third, cut with diamonds and brush with egg. Bake 180about 30-40 minutes.

Note

Light crisp, airy filling! And it's so nutty, this pie! Similar to baklava, but not as cloying as it is. There is a drawback - it ends very quickly.

Nope! (Not in the sense - you can't ask) You don't need to beat very hard, anyway, when the nuts are interfered, they will fall. In some recipes for this cake, they are not even whipped, but simply mixed with nuts and sand, but if you beat them, the filling turns out to be lighter, airy, and not dense.

Butter can be taken directly from the refrigerator, but not frozen. I make the dough with a knife of the combine, everything is chopped and mixed there. And soda - yes, it is extinguished with sour cream.

I have almost the same baklava recipe. It was given to me by a woman from Baku as a recipe for Azerbaijani baklava. There is only 2 times more sugar, the dough is rolled out into 4 layers even thinner and after baking it is generously poured with liquid honey. For me, baked goods should be sweet - eat less - gain less weight!
