Basil in olive oil

Basil in olive oil

Ingredients

Fresh basil, leaves
Fresh garlic
Olive oil for pouring basil

Cooking method

  • Basil in olive oil
  • Peel fresh garlic, crush the cloves with a knife, put in a bowl.
  • Basil rinse, dry to remove excess moisture. Disassemble the basil into leaves and twigs separately. I only use leaves.
  • Cut the basil into small strips and place in a bowl.
  • Pour the mixture of basil and garlic with olive oil, stir gently but thoroughly, and transfer to a plastic jar. The greens should be completely covered with oil.
  • Basil in olive oil
  • Put the jar of herbs in the freezer for storage and use as directed. Olive oil does not freeze very much, but becomes white flakes, but does not freeze like a liquid, so it will not be difficult to take the right amount of seasoning from the jar for use, you will not have to defrost it.
  • Basil in olive oil
  • I prepared this jar a couple of days ago, it stands well in the freezer. Has already begun to freeze from below, the mass (olive oil) becomes whitish, when it hardens, it will be the color of butter, but not solid.
  • This is what the greens look like now, took out a jar from the freezer
  • Basil in olive oil
  • Basil in olive oil
  • Today I used basil for a penne pasta with soft cheese. This is how basil looks right out of the freezer, olive oil froze and turned white
  • Basil in olive oil
  • Here the mixture stood a little on the table, warmed up and melted, as you can see, the basil has not lost its color, and there is also the taste and smell of all components
  • Basil in olive oil

Note

Such a seasoning dressing will be in demand at any time of the year, since fresh basil is not kept fresh for long.
I don't chop the garlic finely, but crush it with a knife. I make it so that I have the choice to use a dressing with or without garlic, and the large garlic can always be removed, or left in the jar.
As you use, the jar can be constantly supplemented with herbs.
The smell is great! It smells like basil and garlic!)) And olive oil!
Cook with pleasure and bon appetit! Basil in olive oil

Basil, dushka is a spicy-aromatic annual herb 40-60 cm high with oblong-ovoid leaves and white or pale pink flowers in long cluster inflorescences. Homeland - East India.

Cultivated in many countries of the world; in the former USSR - in the south of the European part, in Central Asia, in the Caucasus. As a spice, the aerial part of the plant is used, which has a pleasant specific smell due to the content of essential oil (1.5%) and tannins (6%), and a slightly bitter taste.

The leaves are used fresh and dried, adding to salads, gravies, soups, meat and fish dishes; and also, when salting and pickling cucumbers, tomatoes, zucchini, squash, porcini mushrooms.

Basil is also used to flavor tomato juice, canned vegetables, vinegar fragrances (a few fresh leaves are placed in a bottle of vinegar). Leaves are usually harvested during flowering (July - August), when they are most fragrant, they are collected in bunches, dried in the shade and stored in bags, boxes in a dry place.

Admin, and how long can such a basil be stored in the freezer (it doesn't freeze, right?)?
Admin
Until you eat the olive oil will be like white flakes, but it will not freeze at all, and the basil will be in the oil - everything will be fine, especially in the freezer

I have cubes of butter with basil in my freezer, I did it on purpose - they behave normally!
Manna
Admin, thanks for the answer and for the idea. I'll have to try. Do basil need to be packed tightly or loosely? Does it matter?

I just mixed it well and put it in a jar, pressed it down a little with a spoon and trimmed it so that the greens were completely covered with oil and that's it - closed the lid and put it in the freezer

As a lover of this kind of gas stations, I express my gratitude .... again ... Great idea .. I'll make a jar - it's just a treasure for pizza by winter !!!!

Admin, take olive oil Extra Virgin or refined (purified)? Is Extra Virgin going to overpower the taste of the basil?
izvarina.d
Great idea! I will definitely do it. I moved from an apartment to a private house, and now I have a garden bed, so I planted a basilica that out of fright. Admin, and you haven't tried it with rucola, otherwise I will, too, with fright ...
I dry basil, but you need to look after it, if you overexpose it in the dryer, that's it, the aroma has disappeared. And you can't dry arugula, while it is drying - it smells, and then everything - grass-grass. Maybe rucola in oil will retain its aroma and taste, do you think? ..

In general, I used homemade olive oil, first pressed, brought directly from Italy
The taste is revealed when defrosting, when, for example, put on hot potatoes.

Girls, which oil to take is a matter of taste, even if it is sunflower, but basil loves olive oil more

This is a bucket of arugula with oil for the winter! If salads do! And it seems to me that in this form, in oil, arugula will not taste good. It's better to use arugula in fresh salad after all.
I would freeze arugula in portions and use it in cabbage soup in winter, along with beet tops and sorrel - it will be delicious! I cooked such cabbage soup, we liked it!

This year I made a small bookmark of beet tops in the freezer, I really liked it in cabbage soup!

Girls, thank you all for your attention!

Yes, it is tasty. I also cook cabbage soup (green borsch) this way. Only instead of beet tops - I put chard.

Tanyusha, great recipe! Thank you so much
It remains only to carve out a place in the freezer
Admin

Yes, Marina, with a place in the freezer, it turns out strained! But it's worth it, today I checked it in practice myself
Twist
Tanyush, I have something this year with berries swung to the fullest. So now I'm fighting for every centimeter. But I will definitely find a place for basil - everyone loves it, and in winter it is sold practically tasteless, and it withers instantly
Thanks again for this recipe!

Marinochka, to your health!

In winter I buy Israeli basil, it smells and tastes very good! But basil does not want to be stored for a long time! And when it starts to wither a little, the very thing is to put it in the freezer - there it will be more whole for the benefit of the case! and such preparations can be made for almost a whole year, as a way to preserve fresh basil.
Look, I used his ice cream for pasta yesterday, it turned out very cool, and the taste and color, everything was in place!
Let's take a look
LLika
Admin, I'm going to put + for the recipe. I already have basil in oil cooked, but I have not seen it yet
I did not find green basil in my city, I asked to bring it to order, they only bring red, and it is less fragrant. Therefore, I asked my sister (lives in another city) to buy oil and basil and cook it, freeze it, and then I will pick it up. Now I'm worried, but suddenly they try and they like it, then I won't get it
Admin

Yes, it really would be a pity not to taste such a treat

I cook with him all the time, add to different dishes, from boiled potatoes ... then everywhere to taste, very cool!

Olive oil hardens well to a thick white color, so it can be stored simply in the refrigerator on a cold shelf.

Cook for health! When you taste basil, write your impressions - very interesting
Leska
Admin, thanks for such a wonderful recipe! Basil this year is growing like dandelions in the field (I grow it in flower pots on the balcony of 3 varieties), before you can cut it, it is already blooming. But now the first half liter (can) from your light hand is already in the refrigerator.
Admin

That is great! Add it everywhere as soon as possible, even in cereals - it's delicious!

Leska, good health!

Today is my procurement day! Thank you , Tatyana for an interesting recipe!

Can you use refined sunflower oil instead of olive oil?

You can, but olive oil tastes better for basil, they are better friends with each other, the taste is better

When choosing a new refrigerator, an indispensable condition was - a small volume of the freezer ... now when I see such healthy snacks, I understand how wrong I was
I love basil, but in a bunch there is always a lot more of it than I can use before it ... And green is not always on sale, especially its absence strains, at moments when it is really needed. And here is such a wonderful way out. Thank you!!!
Admin
Cook for health! And the freezer will have to be purchased separately

I prepared jars of basil in oil from heels in the fall. Indeed, it is better, more aromatic and tastier in olive oil. Next time I'll cut the garlic into large pieces or crush it a little. I missed its aroma ... Thanks, Admin, for the delicious recipe.
Admin

csv, good health! And the garlic can be added separately to the cooking dish, just peel and crush with a knife - I do so often

Nice to hear that the basil flavor could please you!

Tanyush, thanks Itself would not have thought of preparing basil like that. And now I have frozen the jar and use it

Tanechka, thank you very much for the recipe idea .. now in Finland .. the basil is on sale gorgeous, I will pour it in butter and bring it home .. and before leaving, I made pesto from parsley and added it frozen. in basil oil, it turned out great, and then I put the leftovers in a silicone mold for ice, froze them and put these "bombs" in a box .. an excellent addition to the pasta.

Natasha, to your health!
I also periodically pour a fresh portion of greens with olive oil and keep it handy in the fridge or in the freezer - then it's very convenient to use

I rush past ... I smell, from the side of the tape of new messages it smells delicious! Well, I'm a bullet here!
And this, Akazza, Tanechka has aromatized the whole Bread Maker!
A very convenient way to keep tasty pasta or potato pouches ready. I am taking it into service. This is almost ready-made pesto sauce! It remains only to grind pine nuts in a mortar and voila, the delicious sauce is ready in a minute!
Thank you, Tanyush! And where did I get worn before ?!

Girls, no one put basil in a glass jar like that? There is no plastic can, but there is "unnecessary" basil. Will it burst in the freezer?
Tricia
Great idea for keeping olive oil dressings in the freezer! Thank you!
Buy urgently containers with screw lids and make basil with garlic, rosemary with tarragon and lemongrass, peppercorns with cardamom and ginger! And first, buy olive oil.
Admin, Tatyana, what do you think, and if you add finely chopped sun-dried tomatoes to such greens, it will also be stored well - why should they be afraid in the freezer?

This year I made a lot of homemade pestle, but there was less oil, because I can add it from the bottle at any time + the amount of frozen food is less.
I put the whole pestle in glass jars from under it (my kids respect it very much) and froze it. Everything is fine, one has already been thawed and eaten, so freeze it in the glass, do not be afraid.

Thank you, Natasha (not mistaken in the name?). So it can be in glass.

Admin, Tanechka, thank you very much for your recipes, and inexhaustible imagination Happy New Year to you and your loved ones, fulfillment of all desires
I was just worried that my basil was starting to wither, but here such a miracle. Already standing in the freezer, and the apartment smells deliciously of basil and garlic, because while she was cutting, the smell had time to spread. Now our new year smells not only of tangerines
Admin
Tanyusha, to your health! Let the blanks be useful!
Today I brought basil, thyme and rosemary from the super, I will add oil

HAPPY NEW YEAR!

You can do that, I have basil leaves in olive oil - it stands perfectly in zero chamber. You just need to completely cover the leaves with oil.
