Sunflower oil, odorless, Art. l. 1.5
Wheat flour c. with., g 500
Wheat bran, Art. l. 3
Salt, tsp 1.5
Sugar, Art. l. 1.5
Yeast Saf-moment, h. L. 1.5.

Cooking method

  • Load the components into the HP in the order according to the recipe. Yeast - into the yeast dispenser. Bake in program 02 (Quick bake). Before starting the ascent (after 18 minutes, on the timer 1.42), you can sprinkle sesame seeds on the top of the bread (about 2 tablespoons). Crust color - dark, size - L

A couple of hours ago I took out this bread, how delicious it is !!! I really had rye bran, instead of curdled milk, fat-free kefir (the old one) and live yeast-10 gr. Lviv. In the process of kneading, I added 4 tablespoons of kefir (I looked at the bun) - I got up, played out great, came out fragrant, delicious! Most likely I will bake it as a base one - it is very important for me to add bran. So it’s interesting, I’ll probably add a spoonful of bran slowly, it’s almost white! There is no greyness from bran. Therefore, I think that you can still .. a couple of spoons)))))))))

Yesterday I bought bran and baked bread according to your recipe, Valery, but it turned out not very successful: it rose quite slightly, the pores are small, but most importantly, the crumb is moist, sticky, that is, it is not raw, but not fluffy. Perhaps the problem is in yeast, I took some unfamiliar ones (there was no saf moment) and did not check them. Today we have to work on the mistakes, because it tastes very, very superb, and I will definitely bake it.

Thank you Admin, I will definitely re-read all your tips, I use them constantly and successfully! Yesterday I hurried with the yeast: girl_red :, I measured the liquid (I had 2.5% kefir), but the flour seemed a bit heavy to me, apparently in it is the reason for the failure.

Ivanovna5, thanks for the thank you. I agree with Roma - you must definitely adapt the recipe to your flour. I bake according to this recipe and all the time "I play with flour and water" when I buy new flour - everything turns out great if you follow the bun. Good luck to you.
