Ingredients

Wheat flour 450 g
Sour cream 200 g
Eggs 1-2 pcs.
Butter or margarine 200 g
Sugar 100 g
Soda 0.5 tsp
Ginger 1 tsp
Cardamom 0.5 tsp
Berry (blueberry) 2 tbsp.
Sugar taste
Starch 1 tbsp. l.
Salt in the dough 0.5 tsp

Cooking method

  • Sift flour and baking soda through a sieve. Add sugar, ginger and cardamom. Make a depression in the middle, put soft butter and eggs. Add sour cream and quickly knead the dough. Do not knead for a long time.
  • Put the dough in a plastic bag and put it in the refrigerator for a couple of hours, I usually leave it overnight.
  • Rinse the berries, dry on a sieve to remove excess water. Divide the dough into two parts, one larger, the other smaller. Roll out most of the 1 cm thick and put in a mold, while making bumpers out of the dough. Place the dish (26 cm) with baking paper. Tilt the porcelain cup in the middle. Pour blueberries mixed with sugar and sprinkle with starch around the cup over the entire cake. Close the top of the pie with a second rolled flat cake and pinch the edges.

  • Grease the cake with an egg, pierce in several places with a knife or fork to release steam.
  • Bake at 200 g, on convection at 180 g. If the top turns brown quickly, cover it with baking paper.
  • Let the cake cool in the pan. Cut off the top and remove the cup, berry juice will collect under it.

A very simple and delicious recipe for shortcrust pastry pie with sour cream. As soon as the berry season begins, I make sure to bake it. Best of all, this pie with blueberries, although baked with raspberries .. The whole point is that the juice from the berries is collected under an inverted cup and the pie is never wet, it bakes well.
I found the recipe once on calendar leaves, changed it a little to my taste, and it took root in our family.
I tried to bake it with baking powder instead of soda, I liked it less. The amount of soda is small and is well extinguished by lactic acid contained in sour cream. Ginger and cardamom do not block the taste of the berry, but the dough is more aromatic when added.
