Ingredients

zucchini large 1 PC
flour 400-500 gr
serum 200-300 ml
salt taste
greens 1 bundle
garlic 1-2 cloves

Cooking method

  • Peel the zucchini and remove the seeds. Chop. Stir in flour. Add whey to the dough to the desired dough consistency (like for pancakes). Salt. Cut the greens. Squeeze the garlic through a garlic press. And bake in a waffle iron.

Note

All ingredients are approximate. If there is less flour, the pancakes will be very zucchini, soft and thin. If there is a lot of flour (and therefore whey) - dry or slightly rubbery. So look for your "golden mean".
I have it different every time. Depending on the moisture content of the flour, the juiciness of the zucchini ...

I don't grease every time. I bake in the same way as in a regular pancake pan with a non-stick coating. The only difference is that the shapes have bulges, so you should still lubricate them periodically so that the pancakes can be easily removed.

It turned out great. In the process, the waffle iron for Belgian waffles broke down, I had to fry it in "flowers". At the same time, I found out the difference. The floral ones are crunchier, more like cookies, and in the Belgian one they look more like pancakes. Mine are happy to eat squash pancakes, and in this form they are even healthier. There is much less oil. So I went to choose a new waffle iron, especially since such an application is just great.

It's just that in Belgian you can hold it a little longer, and it will be crunchy, and in "flowers" - a little less, and it will be soft. But I agree that the "flowers" are still more for the livers, and it is much easier to get a "cookie" consistency in it.
