Berry parfait

Ingredients

raspberries (blueberries, currants, etc.) 200 g
powdered sugar 70 g
cream, 33% fat 300 ml
sugar 70 g
egg 2 pcs.
lemon, juice only 1 PC.

Cooking method

  • 1. Carefully sort the berries, wash, dry with paper towels and chop in a blender or rub through a fine sieve. Add lemon juice to the berry puree. (I did not add lemon juice). Mix.
  • 2. Separate the egg yolks from the whites. Pour the egg whites into a heat-resistant dish and whisk lightly with the powdered sugar. Transfer to a pan with boiling water (the pan should be slightly larger) and, constantly whisking with a whisk, boil for 5 minutes. Remove from heat, transfer to a bowl filled with ice (or very cold water), and continue whisking until the whites thicken. Allow to cool.
  • 3. Grind the yolks with sugar until foam appears. Beat the cream into a thick foam with a mixer. Add whipped whites and cream to the yolks. Mix gently.
  • 4. Add the berry puree to the mixture, mix gently. Place the parfait in a plastic container, cover with a lid or plastic wrap and place in the freezer for 5 hours.
  • PS The thing is, when you eat parfait exactly in five hours. If the ice cream is left in the freezer for a longer time, then let it stand at room temperature for 10 minutes, otherwise small pieces of ice will come across.
  • Delicious!

Note

* Parfait is one of the varieties of ice cream, in which, in addition to cream and proteins, yolks are also added, which makes the mass more dense and silky. Therefore, unlike ice cream, parfaits do not need to be whipped while freezing.
The name comes from the French word parfait, which means flawless, magnificent. Parfait was a favorite delicacy of the Austrian Imperial House. To this day, it is amazingly prepared in numerous pastry shops in Vienna. After reading the recipe, you will understand that you can easily do it yourself.
You can use any other berries and fruits as a flavoring and color additive.

Gasha, I did it last summer. Mine liked it even more than ice cream. But the recipe was so intricate that I was not enough for more than a couple of times
