Baltic herring fried in sweet and sour sauce

Ingredients

Fresh herring 1 kg.
Salt, white pepper taste
Rye flour 2 tbsp. l.
Red onion 2 pcs.
Vegetable oil 2 tbsp. l.

Cooking method

  • Wash and remove the heads and entrails of the herring. Season with salt and pepper with coarsely ground white pepper. Breaded in rye flour. Leave for the duration of the marinade preparation.
  • Prepare the marinade: Pour 1 glass of water into a saucepan, half a glass of apple or wine 6% vinegar, 8 tbsp. l. granulated sugar, 1 tbsp. l. allspice peas, 4 bay leaves, 2 cloves. Bring to a boil and boil for 3 minutes. Finally, add 2 red onions, cut into rings. Leave to cool slightly.
  • Fry herring on both sides in sunflower oil until golden brown.
  • Put the fried herring in layers in a deep bowl, pour over hot marinade, cool.
  • Good both hot and cold.

Time for preparing:

20-30 minutes

Note

Fried herring looks unpresentable. But it is the national dish of the Finns and Swedes. The sweet and sour sauce gives it a spice and prevents it from spreading.

Good evening! I wrote down your recipe a long time ago and decided to say thank you for registering. My husband and I really like this herring, this dish has firmly become one of our favorite fish dishes. I only use sugar in a marinade for 8, and 4 tablespoons, it seems to me that it is quite enough.

Victoria, glad you liked it, thanks for the tip. This fish is somehow "offended", or simply salted, or bought for cats. And it is tasty and if it is large, then there is not much fuss with it.
