Ingredients
Frozen sprat 1 kg
Salt 1 tbsp l.
sunflower oil 0.5 tbsp.

water 300 ml
tea 7 tsp
citric acid slightly less than half a tsp.
Cooking method

Gut the sprat, rinse, dry with a paper towel. Brew tea in 300 ml of water, let it brew, strain, you should get 250 g. Tea should be warm. Add salt, oil, spices and lemon to the tea. Pour some of this liquid into a plate, dip the fish in it and put it in a saucepan in rows or crosswise. Pour the remaining liquid into a saucepan over the fish. Close the pan lid, jellied program for 25 min.

I tried sprat and capelin. I liked sprat more (capelin has its own smell, I don't really like it). It is convenient to gut the fish with a fork, you prick the fish on a fork just below the head and scroll - the head is gone. Then you open the prong of the fork into the belly, it turns out very quickly, and it is even better not to defrost the fish completely.
