Red currant meringue pie

Ingredients

Dough
Eggs 2 pcs.
Sugar 90 g
Butter 90 g
1/2 lemon zest
Flour 180 g
Baking powder 1 tsp
Meringue
Eggs (proteins) 4 things.
Lemon juice 3 tsp
Sugar 200 g
1/2 lemon zest
Red currants 450 g
Almond

Cooking method

  • We heat the oven to 180about FROM.
  • Cooking the dough. Beat eggs with sugar until smooth, add softened butter and zest in pieces. Beat everything well again. Add flour mixed with baking powder and knead the dough.
  • We spread the dough in a split form and level the surface. Bake for 20 - 25 minutes until golden brown.
  • Wash the currants and dry them.
  • Whisk the whites into a strong foam with lemon juice and sugar, add the zest, currants and mix gently. Put the mixture in a mold with dough and bake for another 30 - 40 minutes.
  • Red currant meringue pie
  • Sprinkle the top of the pie with almond "petals" and currant berries.
